TACO SEASONING
This taco seasoning uses basic pantry staples and can be tossed together in an instant. No need to buy the seasoning packet ever again!

Yield enough for 1 pound ground meat (about 3 tablespoons)

Steps:
- In a small bowl, combine the chili powder, cumin, cornstarch, salt and pepper.
- To use: Brown 1 pound of ground meat in a skillet. Add the taco seasoning and 2/3 cup water, bring to a simmer and cook, stirring, until thickened, about 4 minutes.
TACO SEASONING (WITHOUT THE CHILI POWDER)
Here is a recipe that uses only fundamental ingredients. Every other recipe I have found for taco seasoning has chili powder in it, which is a mix itself that has many of the same ingredients as taco seasoning, but in different proportions. This recipe takes chili powder out, but puts its ingredients and proportions back in. Now you have full knowledge and control of all of the ingredients. Adjust the red pepper to your heat preference. I would rate the heat level for this at around medium-hot, so adjust the red pepper as you see fit. I hope to see other variations spring out of this one.

- In a jar with a tight fitting lid, combine chili powder, paprika, cumin, onion powder, garlic powder, cayenne pepper and cornstarch. Close lid securely, and shake well to mix contents. 7 teaspoons is equivalent to 1 (1.25 ounce) package of taco seasoning.

SALT FREE TACO SEASONING
Under 30mg sodium per teaspoon. Salt-Free alternative to the envelope mix. good for seasoning taco meat, burrito meat, meat loaf. Also good sprinkled over cottage cheese, or mixed into sour cream for a dip. Add according to taste preference.

- Put all ingredients in a labeled (Salt-free-taco) sandwich size zip lock plastic bag.
- Seal and shake.
- I keep my baggies of seasonings I make in an old bread tin, labeling the lip with a smudge free marker.
- Then I can find the seasoning mix I need quickly.
- When ready to use, shake bag before using.
- This makes about 30 teaspoons Serving size is 1 teaspoon for use in recipes.

- After you cook your ground beef add maybe a 1/4 cup of water and add mix.
- Right before you serve sprinkle salt substitute on beef.
- Tip: if you prefer to use salt in your cooking add it at the table. You taste it more and end up using less salt. Your heart will thank you.

TACO SEASONING, REDUCED SODIUM & GLUTEN FREE
Homemade gluten-free seasoning mix for tacos. As a commenter pointed out, some brands of Chili Powder contain salt, and sometimes wheat products, so read the label when you shop for yours. This is a bit hotter than the commercial variety. You can adjust the cayenne and type of chili powder for your desired level of heat, and add salt if you wish. Makes enough for 4 lbs of ground meat. Use 2 TB per pound. Or, sprinkle sparingly over fish fillets before grilling for fish tacos.

SALT FREE PENZEYS TACO SEASONING
I am always asking the Penzeys store here if they have come up with a salt free taco seasoning and to my suprise the girls there concocted one! This is from Lynn, an employee at the local store. All of the following ingredients are Penzeys spices so it might not taste the same if you use another brand. The ingredient list makes a bit more than 4 T. which is for 1 pound of meat. Please adjust accordingly.

- Mix all ingredients together.
- Brown 1 pound of ground beef and drain off fat.
- Sprinkle 3-4 tablespoons of seasoning over beef, stirring to coat.
- Add 3/4 cup water, stirring to blend.
- Reduce heat and simmer 5-10 minutes until thickened.
- ETA: When posted, Zaar is splitting the tomato powder up and showing it as tomato, powder. These are not tomatoes, but powder bought from Penzeys. This could also be the cause of it showing 7mg of sodium as well.
