TAHINI MILKSHAKE

- In a blender, combine the ice cream, milk, tahini, vanilla and cinnamon and blend to combine. Pour into glasses and top with a drizzle of chocolate syrup if using, crushed cookies, whipped cream and sprinkles.
TAHINI BREAD TAHINLI EKMEK
A Turkish bread that kind of looks like a cinnamon roll. Making for Zaar tour 6. instires from Binnurs Turkish cookbook; boy is it awesome.

Steps:
- Proof yeast in 1/8 cup warm water (I add 1 Tablespoon honey).
- Add sugar, scalded milk, and butter.
- Add flour; knead 5 minutes.
- Let rise until doubled; punch down; cut into 5 equal pieces.
- Roll out each piece until they are a thin round shape.
- While dough is rising, make filling by mixing tahini and sugar together.
- Spread the filling on each round equally.
- Roll up jelly-roll style.
- Let rest, covered with a damp cloth, for 30 minutes.
- Hold them at both ends of the roll and swing them to make them longer and thinner (That's what the recipe says.).
- Wrap them like a cinnamon roll.
- Place parchment paper on an oven tray; arrange dough on it.
- Brush with egg wash; sprinkle with sesame seeds.
- Let rest 10 more minutes (I am guessing until doubled).
- Preheat oven to 400 degrees Fahrenheit.
- Bake for 30 minutes.

BREAD WITH TAHINI AND SYRUP
Steps:
- In a large bowl, combine flour, salt and butter. Mix lightly with your fingertips until dough forms pea-sized pieces. Stir in milk and lightly knead until dough forms a ball. Transfer dough to a buttered bowl, cover with plastic wrap, and let rest 1 hour.
- On a lightly floured board, shape dough into a log and divide into 8 pieces. Roll each piece into a ball and place on the floured board under a slightly damp towel for 30 minutes.
- Stir together the tahini, maple syrup and melted butter, and set aside.
- Roll four of the dough balls into 7-inch rounds, and coat the surface of three of the rounds with a thin layer of the tahini mixture and stack them on top of each other. Place the fourth, uncoated round on top and press the edges together to seal the stack. Place a towel over the top and repeat process with remaining four dough balls. (You should have extra tahini mixture left over). Let them rest for 30 minutes.
- Place one of the stacks on a lightly floured board, sprinkle with a little flour and gently roll into a larger 9-inch round, about 1/4-inch thick. Spread half of the remaining tahini mixture over the top, and roll up like a jelly roll. Use a sharp knife to cut into 4 pieces and place them under a towel. Repeat with remaining round. Let them rest for 15 minutes, then roll each piece of dough into a 6-inch square.
- Heat a cast iron skillet or griddle over medium heat and brush lightly with the melted butter. Place one square of dough in the skillet and cook for about 1 minute, or until dough begins to bubble and turn light brown. Brush bread lightly with melted butter, flip and bake other side for 30 seconds to a minute, or until slightly crisp on the outside but still soft. Transfer bread to a plate, cover with foil to keep warm, and cook remaining bread.
- Serve hot, drizzled with warm maple syrup.
HOMEMADE TAHINI!
After searching high and low in my town for a jar of tahini, I couldn't find any! I went searching online and found this easy recipe. This is MUCH cheaper to make yourself, and only takes a couple minutes.

Steps:
- Preheat the oven to 350°F.
- Spread the sesame seeds on a shallow baking tray and bake, shaking frequently, until fragrant, 8 to 10 minutes.
- Do not brown.
- Cool.
- Put the sesame seeds in a blender or food processor fitted with the metal blade.
- Add the vegetable oil.
- Process to a smooth paste, about 5 minutes.
- Add more oil if necessary, to bring the paste to a thick pouring consistency.
- Tahini will keep stored in a tightly covered jar in the refrigerator for several months.
TAHINI BILLIONAIRE BARS
We took millionaire bars-shortbread plus caramel plus chocolate-and gave them an upgrade (hence, billions) with sesame seeds and tahini. The shortbread is tender, the filling is gooey, and the chocolate ties it all together.

- Shortbread:
- Place a rack in middle of oven; preheat to 350°F. Lightly coat a 9x9" or 8x8" baking pan, preferably metal, with nonstick spray. Line with parchment paper, leaving overhang on all sides. Whisk flour, powdered sugar, sesame seeds, and salt in a medium bowl. Add butter and toss to coat. Using your hands, work in butter until pieces are about pea-size. Using a rubber spatula, mix in yolks. (Dough should hold together when squeezed.)
- Scrape dough into prepared pan and gently press into an even layer (lightly flour your hands if needed). Prick dough with a fork in several spots (this will help it stay flat as it bakes).
- Bake shortbread until golden brown, 24-28 minutes (or up to 35 minutes if using a glass dish). Let cool slightly.
- Butterscotch and assembly:
- While the shortbread is cooling, heat brown sugar and butter, whisking constantly, in a heavy medium saucepan over medium until butter is melted and sugar is dissolved, about 3 minutes. Whisk in cream and salt. Bring to a boil and cook, whisking constantly, until butterscotch is thick enough to coat a spoon (bubbling will become less frequent), about 5 minutes. Remove from heat, add tahini and vanilla and whisk until incorporated and smooth.
- Pour butterscotch over shortbread and tilt pan to distribute evenly. Chill until set, 30-40 minutes.
- Melt chocolate in a microwave-safe bowl in the microwave in 40-second increments, stirring between bursts. (Alternatively, place chocolate in a heatproof bowl set over a saucepan of gently simmering water; bowl should not touch water. Heat, stirring often, until melted and smooth.) Pour over butterscotch and spread evenly to edges of pan; sprinkle with sesame seeds. Chill until chocolate is firm, 1-2 hours.
- Using parchment paper overhang, pull bars out of pan and set on a cutting board; remove parchment. Using a serrated knife, slice into 25-36 pieces (5-6 cuts in each direction). Bring to room temperature before serving.
- Do Ahead: Bars can be made 4 days ahead. Store airtight at room temperature.
HOMEMADE TAHINI
Tahini is a staple in Middle Eastern cooking. It's added to mashed garbanzo beans to make hummus, mixed with date paste, or drizzled with pekmez in Turkey for breakfast. It tastes great in sandwiches or baked into cookies. Really, there are many many uses for this tasty dip. Start with the freshest sesame seeds you can find.

- Preheat the oven to 350 degrees F (175 degrees C). Spread sesame seeds on a rimmed baking sheet.
- Bake in the preheated oven, shaking the baking sheet frequently, until seeds are lightly toasted, 5 to 10 minutes. Let cool, about 10 minutes.
- Pour cooled seeds and 1 1/2 cups olive oil into a food processor. Blend until smooth, 1 to 2 minutes. Add more oil and blend until a thick yet pourable consistency is reached.
