Steps:
- Slice meat into thin 1/4 inch slices. Mix all ingredients and sliced meat in glass container or zip-lock bag. Marinate in refrigerator for 24 hours. Drain liquid from meat and pat dry with paper towel. Sprinkle marinated meat with your choice of salt, pepper, hot pepper flakes, or season salt to your taste.
- Put meat in dehydrator for 2-8 hours depending on your preference for jerky tenderness.
- Jerky can also be put into the oven on a rack at 140-160 degrees for 4-12 hours.

This is the very best jerky you have ever tasted, I've tried a lot of them, and this one's the best - you will reward me on this one! I use venison when available, but cheap round steak is great also, and it's all done in your oven.

Steps:
- Cut meat into strips no thicker than 1/4 inch. In a large bowl, mix together onion powder, pepper, garlic powder, salt and Italian seasoning. Stir in Worcestershire sauce, soy sauce and pepper sauce. Place meat into a container, and combine with marinade. Cover, and refrigerate 24 hours.
- Place oven rack on the highest level. Place aluminum foil on bottom of oven to catch drips. Preheat oven to 150 degrees F (65 degrees C).
- Insert round toothpicks through the tops of the strips of meat, and hang them from the oven rack. Bake in preheated oven for 4 hours, or until dried to desired consistency.

Steps:
- Prepare the chicken by removing the backbone using a pair of kitchen shears or a sharp knife. Transfer the chicken to a baking sheet and and flatten it down to spread the chicken out as much as possible.
- In a blender or food processor, combine the peppers, garlic, thyme, allspice, onions, brown sugar, nutmeg, ginger, olive oil, lime juice, vinegar, salt, and pepper. Blend until smooth.
- Pour the marinade over the chicken. Cover with foil or plastic wrap and marinate in the fridge for at least 3 hours or overnight.
- Preheat the oven to 400°F (200°C).
- Remove the foil or plastic wrap and roast the chicken for 45-50 minutes, until cooked through. Rest for 10 minutes on a cutting board before carving and serving.
- Enjoy!
