Steps:

  • Whisk 2 tablespoons whole-grain mustard, 1 tablespoon lime juice, 1 teaspoon red wine vinegar, 3 tablespoons olive oil, and salt; add 1/4 cup chopped cilantro. Grill 4 ears corn; cut off the kernels and toss with 1 can drainedblack beans, 1 diced red bell pepper, 4 sliced radishes and 3 chopped scallions. Toss with the dressing; season with salt and pepper.

Steps:

  • Whisk 1/2 cup sour cream, 1 to 2 tablespoons lime juice, and 1/2 teaspoon each sugar and kosher salt in a large bowl. Toss with 1/2 head shredded iceberg lettuce, and 1/2 cup each chopped plum tomato, chopped cilantro, chopped scallion and shredded cheddar cheese.

Steps:

  • Cover a platter with lettuce and top with next 6 ingredients.
  • Mix together the dressing and salsa. Drizzle over salad just before serving.

10 ounces torn romaine lettuce
1 cup frozen corn, thawed
1 large tomatoes, chopped
4 1/2 ounces oscar mayer deli fresh shaved smoked turkey breast, coarsely chopped
15 ounces canned no salt black beans, rinsed
1 cup 2% cheddar cheese, shredded
1/2 cup chopped red onion
1/2 cup light ranch salad dressing
1/2 cup thick chunky salsa

  • Combine dressing ingredients.
  • Stir until blended.
  • Refrigerate.
  • Use a clear glass serving bowl and layer one salad ingredient at a time, from lettuce through bacon.
  • Serve immediately with the dressing on the side.

  • Place a cast-iron or other heavy-bottomed skillet over high heat and let it get hot enough for water to skitter over the surface when sprinkled on the pan. Add the corn and a generous pinch of salt and stir. Let the corn dry fry in the pan for three minutes, or until the corn is fragrant, has released some liquid, and has some golden brown spots. Transfer the corn to a plate to cool.
  • On a large serving platter, arrange the bite sized pieces of romaine lettuce. Arrange the remaining ingredients on top of the lettuce in stripes in the following order: cilantro leaves, hard boiled egg slices, black beans, tomatoes, cucumber cues, red bell pepper cubes, olives, carnitas or pulled pork, and thinly sliced green onions. Arrange the avocado cubes and cheese cubes along the sides perpendicularly to the other stripes. Scatter lime wedges over the salad and serve. If desired, Fritos make a wonderful garnish.
