BROWN SUGAR PUDDING CAKE

This recipe was one of my Grandma Carr's. It is an old one but a very good one. Its amazing comfort food, great on a winter night for dessert. We like it with ice cream but whipped topping is good, too.

Brown Sugar Pudding Cake image

Steps:

  • 1. Preheat oven to 350 degrees. Combine all sauce ingredients. Pour into a 1-1/2 quart baking dish. Set aside.
  • 2. For pudding cake, beat butter and sugar in a mixing bowl. Combine flour, baking powder, salt and nuts; add alternately with milk to butter mixture. Spoon into baking dish on top of sauce. Bake at 350 degrees for 40-45 minutes.
  • 3. Serve warm with ice cream or whipped cream.

SAUCE ON THE BOTTOM:
1 c brown sugar, firmly packed
1 Tbsp flour
2 Tbsp melted butter
1/4 tsp salt
2 c boiling water
PUDDING CAKE:
2 Tbsp melted butter
1/2 c brown sugar, firmly packed
1 c flour
1 tsp baking powder
1/2 tsp salt
1/2 c chopped walnuts or pecans
1/2 c milk

Steps:

  • Make the bread pudding: Preheat the oven to 325 degrees F. Scrape the icing off the Krimpets; reserve the icing. Cut each Krimpet into eighths and toss with the bread cubes in a large bowl.
  • Whisk the eggs, egg yolks and granulated sugar in a bowl. Bring the heavy cream to a gentle simmer in a saucepan over medium heat. Slowly whisk the warm cream into the egg mixture until combined, whisking constantly. Add the vanilla and reserved Krimpet icing and whisk until smooth.
  • Pour the egg mixture over the bread mixture and gently stir to coat. Transfer to a 9-by-13-inch baking dish; bake until a toothpick inserted into the middle comes out clean, 50 minutes to 1 hour. Transfer to a rack and let cool to room temperature.
  • Meanwhile, make the icing: Bring the brown sugar, butter and scotch to a simmer in a small saucepan over medium heat; cook, stirring, 3 minutes. Add the heavy cream and vanilla and cook, stirring, until the sugar dissolves, about 2 more minutes. Remove from the heat and let cool completely.
  • Transfer the icing mixture to a large bowl. Add the confectioners' sugar and beat with a mixer until smooth, about 1 minute. Spread on the bread pudding.

8 slices white bread, cut into 1/2-inch cubes
10 extra-large eggs, plus 5 egg yolks
1 cup granulated sugar
1 quart heavy cream
1/2 teaspoon vanilla extract
1 1/2 cups packed light brown sugar
1 stick unsalted butter
1/4 cup scotch (optional)
1/2 cup heavy cream
2 teaspoons vanilla extract
2 cups confectioners' sugar

BROWN SUGAR BUNDT CAKE

My mom passed this recipe along to me. It is easy to make and has been a big hit at home and at the office. I get frequent requests for the recipe. It is very moist and delicious and makes a good breakfast cake as well as a dessert. Increase nuts by another 1/3 cup if you like nuts!

Brown Sugar Bundt Cake image

Steps:

  • Grease a 10-inch bundt pan well and sprinkle pan with granulated sugar (even if using non-stick pan).
  • Preheat oven to 350 degrees F.
  • Combine cake mix, pudding mix, eggs, oil and water in large bowl and beat on medium speed until well mixed, about 4 minutes.
  • (Shorten to 2-3 minutes if using stand mixer).
  • Add brown sugar and pecans and mix to combine well.
  • Pour batter evenly into prepared bundt pan and bake for 1 hour or until cake tester comes out clean.
  • Place bundt pan on wire rack and cool 15 minutes.
  • Invert cake onto rack and slip pan off cake.
  • Let cool on rack.
  • Can be stored covered at room temperature.
