Steps:
- Preheat oven to 375 degrees.
- Coat a 9-inch-square baking pan with nonstick cooking spray.
- In a large, heavy-bottomed saucepan over medium heat, begin melting the butter.
- When it is half melted, add the chocolate.
- Remove from heat and stir until the butter and chocolate are completely melted.
- Stir in the sugar, salt, vanilla and eggs until smooth.
- Stir in the flour until well-combined.
- Mix in the chocolate chips.
- Pour and scrape the batter into the prepared pan.
- Bake for 20-25 minutes, until the top is dry but the center is still damp.
- Do not overbake.
- Remove from the oven and cool on a rack until the brownies are cool and firm, about 30 minutes.

- Spray a 13 by 9-inch pan with vegetable oil spray.
- In a glass or ceramic bowl, melt the butter in the microwave. Whisk in the sugar, eggs, cocoa, and vanilla. Stir in the flour and salt. Add chopped semisweet and bittersweet chocolates and pecans.
- Spread the batter in prepared pan. Bake about 25 minutes, just until brownies test moist but not wet. Cool completely before cutting.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
- In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
- Bake in preheated oven for 25 to 30 minutes. Do not overcook.

CRANBERRY BAKED BRIE
This recipe was in our local newspaper several years ago. This is a nice appetizer to serve during the holidays. I like to make it for New Year's Eve.

Steps:
- Unroll crescent-roll dough onto a clean work surface. Separate dough into 4 rectangles. Press 2 rectangles together to make a square; repeat so you end up with 2 squares.
- Cut corners from both squares to make rounds, reserving the extra dough. Place 1 dough round on a greased cookie sheet.
- Slice cheese horizontally into 2 layers. Place bottom half on dough on cookie sheet. Spread with cranberry sauce. Place other half on top. Top with second dough round, pressing and pinching to seal.
- With medium or small cookie cutter, cut shape or shapes from reserved dough corners. Place cutouts on top of cheese round; brush with beaten egg.
- Bake at 350 degrees for 35 minutes, or until deep golden brown. Let cool. Serve alone or garnished with fresh berries and cut fruit.

I know the title is somewhat vague, but this is what we called it growing up. This is a great recipe, because the ingredients are ones I often have on hand. It makes a lot and is very comforting. The cheese, pasta, tomato sauce and meat are a tried and true combination!

BLACK FOREST BROWNIES
These easy-to-make, fudgy brownies, complete with retro decoration, marry a much-loved flavour pairing of cherry and chocolate

- Grease a 30 x 20cm cake tin and line with parchment. Heat oven to 180C/ 160C fan/gas 4. Mix the coffee with 2 tbsp boiling water, then set aside to cool.
- Cream the butter and sugar together for about 5 mins until light and fluffy, then add the eggs, one at a time, incorporating well after each addition. In a separate bowl, combine the cocoa powder and the flour. Add in the cherry essence and cooled coffee to the butter mixture, followed by the dry ingredients. Mix well, then fold in the cherries.
- Spoon into the prepared tin, level the top with the back of a spoon and bake in the centre of the oven for 30-35 mins or until a skewer inserted into the middle comes out clean. Leave to cool completely in the tin.
- Once cool, melt the dark chocolate in the microwave or over a pan of simmering water, then spread in an even layer over the top of the brownies.
- While the chocolate is setting, mix the butter with the icing sugar and a few drops of green food colouring. Put the buttercream in a piping bag fitted with a writing tip nozzle. Cut the brownies into 20 squares, place two glacé cherry halves on top of each one and use the buttercream to create the cherry stem.
