THICK PORK CHOPS & ITALIAN SAUSAGE BAKED WITH WEDGED SWEET POTATOES ITALIAN STYLE
My Italian Grandmother made everything taste good, this is all in 1 pan; pork chops, sausage and potatoes. I serve with apple sauce and a green vegetable. Quick and easy. Adjust to amount of people serving. That's Amore.....

Steps:
- 1. I am using 1 thick cut pork chop per person and 2 sausage links per person, so you can portion size this dish according to how many your feeding. Could be 6 or 8, size pan accordingly.
- 2. POTATOES FIRST: With skins on, clean and boil until fork tender all your potatoes, set aside and cool. When cooled and remove skins and cut into wedges, set aside.
- 3. PORK CHOPS AND SAUSAGE: Pan should be the size needed to hold all chops,sausage and potato wedges. Put in the bottom of the pan just a sprinkle of olive oil and 3/4 cup of water. Place your pork chops, sausage and potato wedges on top of olive oiland water for all to fit. Sprinkle with just a little grated cheese.
- 4. TOPPING: Chop vidalia onion, add grated cheese, Italian seasoned bread crumbs and mix together. Sprinkle all of this all over the chops, sausage and potato wedges. Sprinkle with a little more olive oil and BAKE 350 for 1 hour until pork chops are done, check that they are done and sausage is done according to your ovens heat. You can loosly cover with alum. foil first 1/2 hr. then uncover the rest of the time. Enjoy...
ITALIAN SAUSAGE STUFFED PORK CHOP
Steps:
- Stuffing: In large a rondeau or heavy bottomed pot over medium-low heat, add butter and olive oil, then sweat onion, celery and garlic until translucent, about 3 minutes. Add sausage, and allow it to cook through, stirring often. Add spinach and toasted croutons. Mix well then add chicken stock, cream and parsley. Cook until thickens. Add cheese and season with kosher salt and freshly ground black pepper. Allow stuffing to cool.
- Pork Chops: Preheat oven to 400 degrees F.
- Make a 1-inch incision with a knife right next to the bone of the pork chop. Work the knife inside the pork chop to make a pocket for the stuffing. With a piping tool or simply with your hands, stuff the pork chop with the stuffing mixture until the pocket is packed well. Season the pork chop with salt and black pepper. Heat a large skillet and add oil. Sear both sides, about 1 minute. Place skillet in oven to roast for about 10 to 12 minutes, turning chops over half way through so as not to burn. Cook pork chop to medium, and the internal temperature registers 165 degrees F on an instant-read thermometer. Anything more than medium may dry out the chop.
EASY BAKED PORK CHOPS MARINATED IN ITALIAN DRESSING
This is a very simple and great-tasting main dish with very little prep time. Enjoy!

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil.
- Combine pork chops, Italian dressing, salt, and pepper in a resealable bag. Shake to evenly coat pork chops with the dressing. Spread out in the prepared baking dish.
- Bake in the preheated oven until pork chops are no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

ITALIAN BREADED PORK CHOPS
My father's side of the family is Sicilian, and has been making these pork chops for at least 3 generations. My husband frequently requests these over my marinated and grilled pork chops when I give him a choice. If you do not have an oven-proof skillet, you may cook the chops on the stove at medium-low.

- Preheat oven to 325 degrees F (160 degrees C).
- In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
- Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.

- In a medium bowl, combine the crushed saltines, Parmesan cheese, Italian-style seasoning and garlic powder and mix together well.

- In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. - Brown chops in 2 tablespoons oil to done. Drain, set aside, and keep warm. Crumble and brown sausage to medium done in 1 tablespoon oil. Drain and set aside.
- Combine tomatoes, mushrooms, wine, garlic and onion in large skillet. Cook at medium-low heat until onions are clear. Add sausage and spices; cook at medium-high heat stirring occasionally about 3 minutes or until sausage is done.

- Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
- Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes. Place the pork chops on a plate, then drain all but 1 tablespoon of drippings from the skillet. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Pour in the tomatoes, then season with basil, oregano, salt, and pepper.
