ROAST PORK ON TOAST ROUNDS WITH MANGO CHUTNEY
Leftover roast pork is ideal for this hors d'oeuvre, but roast pork is also available at the deli section of most grocery stores. If not, sliced pork tenderloin is the perfect size for topping toasts. To cook, heat a medium (10-inch) skillet over high heat. Place a tenderloin that has been oiled, salted and peppered in the skillet. Cook, turning occasionally, until the meat reaches an internal temperature of 140 degrees, about 20 minutes.

- Lightly spread mustard on each toast round. Arrange the rounds on a serving platter. Top with a portion of pork, spoon a small dollop of chutney on each piece of pork, garnish with parsley leaves if desired, and serve.
- Adjust an oven rack to the upper middle position and heat the oven to 425 degrees. Arrange bread on a large wire rack. Set the wire rack on the oven rack and bake until toasts are crisp and golden brown on the outside and a little soft on the inside, 4 to 5 minutes.
PARMESAN CHEESE ROUNDS
Steps:
- Preheat the broiler to 425 degrees F.
- With a 2 1/8-inch cookie cutter, cut 2 rounds out of each slice of bread. Arrange the rounds on a baking sheet and place 5 inches from the heat source. Toast the bread on one side until they are golden brown, 3 to 5 minutes.
- Using a whisk, mix together the mayonnaise and Parmesan in a small bowl. Remove the bread from the oven and turn the rounds over to the untoasted sides. Spread each with a thin layer of mustard. Put 1 onion slice on top and cover with about 1 teaspoon of the mayonnaise mixture, spreading the mixture across the onion and bread.
- Broil until golden, about 1 minute. Never take your eyes off these; the time varies with different ovens. Work in batches of 24 rounds. Serve one batch hot while the next is cooking.
TOAST ROUNDS
These little toasts are perfect for pate, spreads or for when you are out of crackers. Basic and elegant entertaining. Dress it up using different bread types. Add various spices that will compliment the food you are serving these with. This recipe is also a great way to use up stale bread and also makes a great snack in place of chips. The cooling racks allow the toast to cook evenly.

- Preheat oven to 350°F.
- Using a juice glass, cut circles out of the bread by using the glass inverted and pushing down and turning.
- Using a pastry brush, spread a very, very tiny amount of mayo onto both sides of the bread circles and place onto a cooling rack. Lightly Sprinkle once side with garlic powder or your favorite spices.
- Bake for 15 minutes or until VERY lightly browned.
- Allow to cool completely, serve with cheese, pate or your favorite spread.

BASIL PESTO BREAD ROUNDS
A very easy, versatile recipe of a pesto topping on French bread slices. One of my most requested recipes! Great for potlucks or as an accompaniment to soup or salad meals. Try them with sun-dried tomato pesto!

- Preheat oven on broiler setting. Arrange bread slices in a single layer on a cookie sheet. Place under broiler for 5 to 8 minutes, or until lightly toasted on one side. Watch carefully to ensure they don't burn. Remove from oven, and flip bread slices so that the toasted side is on the bottom.
- Set the oven temperature for 350 degrees F (175 degrees C). In a small bowl, mix together mayonnaise, pesto, garlic, Parmesan and salt. Spread evenly over untoasted sides of bread slices.
- Bake in the preheated oven for 6 to 8 minutes. Set the oven to broil, and place the rounds under the broiler just until they begin to bubble and turn golden. Let cool slightly before serving.
