Toasted Almond Pudding image

Steps:

  • Melt the stick of margarine. Mix together the coconut, brown sugar, almonds, flour and melted butter. Place on cookie sheet and put in oven at 325 degrees until brown, stirring often. Let this cool.
  • Mix together the pudding and milk then add the Kool Whip. In the bottom of the bowl add a very light layer of the coconut/almond mixture then spoon on top the pudding mixture. Add most of the coconut/almond mixture in the middle just make sure to save enough to sprinkle on the top and then add the remaining pudding mixture. Then add the amount you saved to garnish the top of the pudding.
  • Chill and serve.

  • Add liqueurs to a cocktail shaker with ice. Shake and strain into a 10-ounce rocks glass over ice. Top with heavy cream and serve with a short straw.

Lemon and Almond Rice Pudding image

Steps:

  • In a heavy, medium saucepan, combine the milk, rice, sugar, vanilla seeds, vanilla pod, and salt. Bring to a boil over medium heat, stirring frequently. Reduce the heat to medium-low and simmer, stirring occasionally, until the rice is tender, about 35 minutes. In a medium bowl, mix together the lemon juice, amaretto, and lemon zest. Slowly stir the lemon mixture into the rice mixture and cook for 10 minutes longer. Remove the vanilla pod and discard. Stir in the whipping cream (mixture will still be runny but will thicken as it cools). Spoon the rice pudding into bowls. Cover and refrigerate for at least 4 hours.
  • Sprinkle the chilled rice pudding with sliced almonds and serve.

4 cups whole milk
1/2 cup Arborio rice or medium-grain white rice
1/2 cup sugar
1 vanilla bean, seeds removed, pod reserved

Toasted Almond Pudding image

Steps:

  • Dissolve gelatin in boiling water.
  • Boil 3 cups milk and add sugar; cook for 2-3 minutes.
  • Mix cornflour and orange colour in 1/2 cup cold milk.
  • Remove milk from heat and add cornflour; mix it thoroughly.
  • Cook on slow heat for 4-5 minutes, stirring it continuously (mixture should be thick).
  • Remove from heat; add gelatin
  • Let it cool.
  • Add vanilla essence; mix well for 2-3 minutes.
  • Add whipped cream; mix for about a couple of minutes.
  • Add crushed almonds mix well.
  • Freeze till set.

Almond Bread Pudding image

Steps:

  • Cut croissants into 1/2-in. pieces; place in a greased 13x9-in. baking dish. In a large bowl, combine the eggs, milk, sugar and extracts. Pour over croissants; let stand for 10 minutes. Dot with almond paste; sprinkle with almonds (dish will be full). , Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. , Meanwhile, in a heavy saucepan over medium heat, cook and stir sugar with a wooden spoon until sugar has melted and turned a deep amber color, about 20 minutes. , Add 1 cup cream (mixture will bubble). Stir in remaining cream; cook 10-15 minutes longer or until caramelized sugar is completely dissolved. Remove from the heat; stir in strawberries. Serve with bread pudding.

Banana-Apple Puddings with Toasted Almonds image

Steps:

  • Bring 3/4 cup water and the sugar to a simmer in a medium saucepan over medium heat. Stir in lemon zest and juice. Add apples; return to a simmer, and cook, uncovered, about 5 minutes. Add tapioca, and cook, stirring, until fully combined and slightly thickened, about 4 minutes. Let cool completely.
  • Transfer apple mixture to a food processor. Add 3 bananas, and process until smooth. Stir in yogurt. Divide among 6 bowls. Chill, if desired. Cut remaining banana into 1/4-inch pieces, and divide among puddings. Sprinkle each pudding with 2 teaspoons almonds.
