Steps:
- Saute peppers and onions in butter until tender.
- Add ham; heat through.
- Beat eggs, and seasonings together.
- Add cheese.
- Pour over ham mixture.
- Cook on low heat until almost set, lifting edges to let uncooked portion run underneath.
- Turn over and cook other side.
- Mix mayonnaise and horseradish together and spread on buttered toast.
- Turn egg onto prepared toast and enjoy.

- cook bacon or ham in butter in pan to desired preference.
- Toss in green pepper and onion and cook until vegetables are almost tender.
- Beat eggs in a bowl with salt and pepper.
- Pour over mixture in skillet and cook until eggs are set.
- Turn with a spatula and brown second side lightly.
- Place between 2 slices of buttered toast.

Steps:
- In skillet with olive oil, place cooking onion on medium heat for about 5 minutes.
- Add green bell pepper to onions, cook 5 more minutes on medium heat or until onions are translucent.
- Take onions and pepper off heat, allow to cool.
- In a large mixing bowl, combine cooked onion and pepper mixture, grated carrot and tofu. Tofu should have some lumps and bumps.
- Add turmeric, dehydrated red pepper flakes, garlic powder, black pepper, sea salt and nutritional yeast flakes.
- Mix all ingredients thoroughly.
- Toast bread.
- While bread is toasting put the tofu mixture into the skillet on medium heat until toast is ready.
- Spoon tofu mixture onto toast.
- Enjoy.
- This recipe is great open-face as well.

- In a large nonstick skillet, saute onion and green pepper in 1 tablespoon butter until tender. Stir in ham and parsley. Whisk the eggs, salt and pepper. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set; cut into wedges. Spread each slice of toast with 1 teaspoon remaining butter. Serve omelet wedges on toast.,

Steps:
- With a whisk, beat the eggs, milk and melted margarine.
- Add the ham and green onions, stirring until blended.
- In a heavy frying pan, melt the 2 tablespoons of margarine.
- Pour the egg mixture into the pan, continuously stirring while pouring.
- Cover the egg mixture and cook over med-high heat, for about 3-5 minutes. then remove the cover.
- Run a spatula around the edges of the pan to loosen the eggs.
- If there is still a lot of uncooked egg on top, poke through, allowing the egg to run to the bottom of the pan.
- When semi-set, cut the egg into quarters and flip each piece over.
- Continue cooking until set.
- If desired, top with cheese slices.
- Remove from heat, cover.
- Toast the bread, butter and make 2 hearty sandwiches.
- Serve with tomato soup or fries for a lunch or supper meal.
