  • Cut each pita in half and then each half in triangles and place them in a single layer on a sheet pan. Drizzle with olive oil and sprinkle generously with salt.

Steps:

  • Pop the pitta into the toaster for 30 secs- 1 min, until just puffed but not crisp. Meanwhile, mix together the cheeses.
  • Slice an opening at one end of the pitta and use a teaspoon or a knife to spread the cheese mixture in. Push in some of your favourite fillings, gently squash the pitta closed between your hands, then put back in the toaster - cut-side up. Toast for 1-2 mins until golden and crisp.

  • In a large bowl, mix oil, thyme, paprika, garlic and 1/4 teaspoon salt until blended. Add chicken; toss to coat. Let stand 10 minutes., Meanwhile, in a large bowl, combine coleslaw mix, mayonnaise and remaining salt; spoon into pita halves. Place chicken on an ungreased baking sheet. Broil 3-4 in. from heat 3-4 minutes on each side or until no longer pink. Fill pitas with chicken strips.

Steps:

  • Preheat a toaster oven to 375 degrees F and position a rack in the center.
  • Meanwhile, place the pitas on a toaster oven baking sheet. Brush the olive oil all over each pita.
  • Spread 2 tablespoons of the pasta sauce on top of each the pita. Evenly sprinkle each surface with 1 cup of the cheese. Sprinkle each with 1/2 teaspoon of the dried oregano then arrange 6 of the pepperoni slices on each pizza.
  • Bake until the cheese is melted and lightly browned, 5 to 7 minutes. Remove from the toaster oven and let cool for 1 to 2 minutes. Cut each pizza into 4 pieces and serve.
