Tofu Frosting image

Steps:

  • Use 21 ounces or two packages Mori Nu.
  • For Red frosting use the beet juice or raspberry juice,
  • Orange Juice concentrate for yellow frosting and blueberry Jam for blue.
  • Or experiment with your favorite flavors for frosting.
  • Place all ingredients in food processor and blend.
  • Place in bowl and whisk for 5 minutes. This will allow for more body and stiffness.

1/2 cup powdered confectioners' sugar
1 teaspoon vanilla extract
1 teaspoon almond extract (optional)
1/2 teaspoon salt

TOFU WHIPPED CREAM

This is a great whipped topping for those who can't tolerate dairy. The texture isn't exactly like whipped cream, but it's a nice substitute! I recommend adding about 1 Tbsp Amaretto, too. Mmm!

Steps:

  • Whip ingredients together in food processor until very smooth.
  • Refrigerate for several hours before serving.

1/3 cup oil or 1/3 cup soy margarine
1/4 cup maple syrup (or honey if you're not vegan) or 1/4 cup sugar (or honey if you're not vegan)
1 tablespoon soymilk
1 1/2 teaspoons vanilla
1 teaspoon lemon juice
1 pinch salt
1 -2 tablespoon of your favorite liqueur (optional)

  • Place the silken tofu, fresh lemon juice, powdered sugar, and vanilla extract into a high-powered blender or food processor. Secure the lid and process, pureeing until the mixture is perfectly smooth.
  • Taste the silken tofu frosting and adjust any ingredients as necessary, such as more powdered sugar for sweetness, more lemon, or a dash more vanilla.
  • Remove the dairy-free, vegan vanilla frosting from the blender or processor and use it to top your favorite vegan cake or cupcakes! Serve and enjoy!
