Tomato Feta Salad image

Steps:

  • Cut the cherry tomatoes in half and place them in a large bowl. Dice the feta in 1/4-inch dice, crumbling it as little as possible. Add the feta to the tomatoes and then add the onion, vinegar, olive oil, salt, pepper, basil, and parsley. Toss carefully and salt, to taste, depending on the saltiness of the feta. Serve chilled or at room temperature.

3 pints (6 cups) cherry tomatoes
3/4 pound good feta cheese
1 small red onion, chopped
3 tablespoons white wine or Champagne vinegar
1/4 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons minced fresh basil leaves
2 tablespoons minced fresh parsley

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.

Steps:

  • Cook the pasta in a large pot of boiling salted water with a splash of oil to keep it from sticking together. Boil for 12 minutes, or according to the directions on the package.
  • Drain well and allow to cool. Place the pasta in a bowl and add the tomatoes, olives, feta and chopped sun-dried tomatoes.
  • For the dressing:.
  • Combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt(taste before adding salt) and pepper in a food processor and process until almost smooth.

Steps:

  • Blot tomato slices on a paper towel and place on a serving dish. Cut feta block into slices and place a slice on each tomato. Sprinkle with grapes.
  • Combine orange juice, honey, garlic, salt, and basil in a bowl. Squeeze lime wedge into the bowl. Grate ginger and onion on a nutmeg grater; scrape pulp into the bowl. So good, and a nice change from typical pasta salads. I always get asked for this recipe at potlucks. I usually increase the dressing by about a third, as we like salads moist. A few hours before serving I add the tomatoes along with chopped artichokes, kalamata olives, basil and parsley. Right before serving, I add some roasted pine nuts. This recipe is very versatile, add whatever you want, some of the ingredients I have added in the past are fresh grated parmesan cheese and cucumbers. Fresh Tomato and Feta Pasta Salad image

Steps:

  • Boil Rotini noodles until soft. Drain and rinse with cold water to cool the noodles.
  • Add noodles, chopped onion, and red wine vinegar to a medium sized bowl. Toss well. Cover with plastic wrap and refrigerate approximately 15 minutes. This allows the noodles to absorb the vinegar and lets the flavors infuse while cooling.
  • Add the oil to the cooled noodles and toss gently.
  • Just before serving, add tomato pieces and feta cheese crumbles. Toss well. Sprinkle on more red wine vinegar if the salad is too dry, but be careful, you don't want to use too much and make the salad runny!
