TOMATOES LUTECE

I believe there is a NYC restaurant "Lutece", but this is from Taste of Oregon and is our favorite way to serve fresh tomatoes. Remember, never refrigerate your tomatoes. If you aren't going to use them right away, buy or pick them underripe and they'll ripen up in a couple of days, counter-top. Preparation time includes letting the tomatoes stand at room temperature for 20 minutes.

Steps:

  • Slice tomatoes into thick, even slices; set aside.
  • Combine remaining ingredients in small jar; shake well.
  • Layer tomatoes in shallow dish, covering each layer with dressing.
  • Cover lightly.
  • Let stand at room temperature at least 20 minute.
  • We enjoy them at room temperature for maximum tomato flavor, but the original directions say to chill and serve.

8 tomatoes, firm, ripe
1/4 cup parsley, chopped
1 garlic clove, minced
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon pepper
1/4 cup olive oil, extra-virgin
2 tablespoons vinegar
2 teaspoons Dijon mustard

Steps:

  • Preheat the oven to 400 degrees.
  • Puree the tomatoes in a food mill, blender or food processor. Combine in a small nonreactive saucepan with the shallot, garlic and cream. Bring to a boil, turn the heat to low and cook for 2 minutes. Stir in the parsley, and keep warm.
  • Place the scallops on a nonstick or lightly greased baking sheet, and bake for 3 minutes.
  • Reheat the sauce slightly; over minimum heat, whisk in the butter a little at a time until the sauce thickens slightly. Add the chives. Adjust the texture of the sauce by reducing it a little further or by stirring in a little of the fish stock or water. Taste the sauce, and add a little lemon juice if it is bland. Serve the scallops with a bit of the sauce.

LUTECE BARDON REVIEW 2013 | GOOD FOOD
Centuries later Lutece was reborn, albeit as a restaurant in New York; an expensive French joint that in its heyday was patronised by the bold and beautiful, and feted worldwide. It closed in 2004 after 34 years, when business nosedived after the new owners updated the traditional menu, while simultaneously the expense account lunch was wheezing its last laboured breath.
