Baked Yogurt with Tropical Fruit Compote image

Steps:

  • For the baked yogurt: Preheat the oven to 275 degrees F.
  • Whisk the sour cream, creme fraiche, condensed milk and vanilla seeds in a medium bowl. Divide the honey among six 4-ounce ovensafe glass ramekins or jelly jars. Divide the sour cream mixture evenly among the ramekins and bake until just set, about 20 minutes. Refrigerate until chilled, at least 30 minutes.
  • For the tropical fruit compote: Combine the pineapple, mango puree, dried mango, dried papaya, bananas, brown sugar, granulated sugar and vanilla seeds in a medium saucepan. Bring to a boil, lower to a simmer and cook until the juices are thick and the fruit is translucent, about 30 minutes. Cool until warm, 20 to 30 minutes.
  • To serve: Top each baked yogurt with a heaping spoon of the tropical fruit compote and an edible flower and serve.

Warm Winter Fruit Compote image

Steps:

  • Combine all ingredients in a large saucepan. Cover and simmer 20 minutes. Remove cover and simmer an additional 35 minutes or until liquid is reduced to desired consistency. Serve warm with turkey or pork.
  • Recipe note: Compote may be made ahead of serving time. Cover and store in refrigerator. Reheat to a simmer for 10 minutes before serving.
  • Garnish with sprigs of fresh rosemary, if desired.

  • Combine sugar, guava jelly, orange zest, and water in a small saucepan. Bring to a boil and boil 1-2 minutes.
  • Strain and cool, then stir in the rum.

Steps:

  • Rinse the dried fruit to reduce the added sugar content on the surface of the fruit .Place the dried fruit in the pot. Pour enough water over top to cover it by 1/2 inch. Simmer to rehydrate the fruit.
  • To prepare sauce, combine granulated sugar, water, lemon juice, and corn syrup in a small, heavy saucepan over medium-low heat; cook 5 minutes or until sugar dissolves, , increase heat to medium, bring to a boil and boil 3 minutes or until golden (do not stir).
  • Remove from heat; let stand 1 minute. Carefully add 2 tablespoons butter, stirring until butter melts. Gradually add pomegranate juice, stirring constantly until mixture is smooth. Return to heat; cook over medium-low heat 8 minutes or until thickened. Cool.
  • While the sauce is cooling prepare the topping. Beat cream and pudding mix together until mousse like in consistency (this takes longer than normal pudding mix - between 3 and 5 minutes.) Gently fold pudding and yogurt together.
  • To serve, spoon warm compote into 8 dessert cups. Top each serving with about ¼ cup topping and 1 tablespoon sauce.

  • Place the currants, raspberies and sugar in a pan with 2/3 cup water. Cover the pan and cook gently over low heat for 12-15 minutes, until the fruit is soft.
  • Blend the arrowroot with a little water in a bowl and stir into the fruit. Bring back to a boil, stirring until thickened.
  • Remove from the heat and cool slightly, then gently stir in the blacberry liqueur.
