  • Pour mushroom soup over the peas mixture; add enough milk to the mixture to thicken the soup to the point of there being no lumps. Flake tuna and add to the skillet; season with salt and pepper. Cook until the mixture is warm and bubbly, about 10 minutes.

TUNA BISCUIT SQUARES

The biscuit squares get a head start with biscuit/baking mix and canned tuna. Instead of using American cheese, consider topping your tuna squares with slices of Swiss cheese or with shredded cheese.-Elizabeth Montgomery, Allson, MA

HARD TIMES CREAMED TUNA

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

TUNA BISCUIT BRAID

This recipe comes from the Chicago Tribune, published in the 1980s. I made it often but lost the recipe one day. I searched online for years, trying to find it again, and even tried to recreate it from memory, but nothing was quite right. We're remodeling the kitchen now, and lo and behold, the recipe card fell to the floor when we took the old cabinets down! So here it is, never to be lost again.

BAKED TUNA WITH BISCUITS

Baked Tuna With Biscuits image

Steps:

  • Make traditional white sauce: melt butter in saucepan over low/medium to medium heat. Add flour and stir for a minute or two until mixture bubbles. Gradually add milk, stirring constantly. Continue to stir as the sauce heats up, thickens and reaches a slow boil. Remove from heat, season with salt and pepper.
  • Combine white sauce, tuna and onion and spoon into a lightly greased two-quart casserole or baking dish. Top with shredded cheese. Arrange biscuits on top and bake at 350 degrees for 40 minutes.
  • *For two people, the recipe can be halved; use a small can of refrigerated biscuits (5-6 biscuits.) *Original recipe called for chopped green pepper, which would have been greeted at my house with the enthusiasm level generally reserved for brussels sprouts or Black Plague. Add it if you did a better job raising your children than I did. And cut down on the onion and finely chop it to conceal it from the suspicious eyes of finicky children (or their father.).

TUNA AND CAPER BITES

One weekend while camping, my sister-in-law whipped up a simpler version of these tasty tuna bites as a snack. I decided to add capers, shallot, and lemon to make these elegant enough to serve at your next dinner party! I highly recommend using Mary's Gone Crackers® brand seed crackers; they not only provide the perfect nutty flavor, but they are also very crispy and sturdy, allowing these to be made an hour or two ahead of time.
