Green peppers topped with melted cheddar cheese You can substitute low fat mozzarella cheese for cheddar. If you don't have pre-made bread crumbs use 3 pieces of wet de-crusted low carb bread, pulled apart and thoroughly mixed in the turkey. Using wet bread will create a juicier pepper so be careful when you cut into it.

Turkey Stuffed Bell Peppers image

Steps:

  • Preheat oven to 350 degrees.
  • Cut tops off green peppers as evenly possible, clean and deseed.
  • Dunk green peppers into boiling and leave for 5 minutes or until the peppers begin to get tender.
  • Remove peppers and tip upside down on a towel so the excess water runs out but the inside stays moist.
  • Place peppers in baking dish.
  • Lightly coat the inside of the pepper with salt (optional).
  • Cover dish.
  • Brown and drain the ground turkey and onions.
  • Mix turkey, cheddar cheese, breadcrumbs, tomatoes, and Worcestershire sauce.
  • Place even amounts of the turkey mixture into peppers.
  • Top peppers with remaining cheese.
  • Cover dish and cook for 25 minutes.
  • Remove cover and cook for 5-10 minutes or until the cheese begins to brown (which ever comes first) and serve.

  • Preheat the broiler.

Steps:

  • Heat half the olive oil to medium.
  • Stir in peppers and onions and seasoning (salt, pepper, garlic).
  • Sauté for about 12 minutes or until soft. (It is important to do this over medium heat. We are not looking for the onions to caramelize.)
  • While the vegetables are sautéing, in a separate bowl mix together eggs and milk, set aside. ( Now would also be a good time to turn on the broiler.).
  • Add the turkey to the vegetable mixture and heat through.
  • Turn heat up to medium-high and add remaining olive oil.
  • Now we will add the egg mixture and ½ of the cheese.
  • Cook on medium-high heat for about 2-3 minutes to set the bottom.
  • Place under broiler for about 4 minutes, or until top begins to brown.
  • Remove from broiler and top with remaining cheese.
  • Allow 2 minutes for the added cheese to melt.
  • Slice into 1/8 slices and enjoy warm.

Steps:

  • Two days before frying, set up a large deep fryer with burner base and propane tank, meant for frying turkey, according to manufacturer's instructions. Measure the amount of oil needed by placing the wrapped turkey in the pot and filling the pot with water to cover the turkey by 1 inch. Remove the turkey and mark the water level on the side of the pot.
  • Combine all ingredients, except turkey and oil, in a large saucepan and bring to a boil. Reduce heat and simmer 10 minutes. Cool. Following package instructions, fill the injector that comes with turkey fry kit with butter mixture; inject butter mixture in turkey all over. Refrigerate turkey for at least 4 hours and up to 24 hours before frying.
  • Fill the fryer with oil up to the marked line, attach a deep fry thermometer to the pot, and heat oil to 350 degrees F. Put the turkey on the fry stand, attach to the metal hanger that comes with kit, and slowly lower into the hot oil. Cook turkey 4 minutes per pound; when done, turkey will float to the surface. Meat should register 180 degrees F on meat thermometer. Let turkey rest for at least 20 minutes before carving.
  • You can also use the butter mixture to baste a turkey in a 325 degrees F oven every 20 minutes until an internal temperature of 180 degrees F is reached.

  • Preheat an oven to 350 degrees F (175 degrees C). Arrange the bell peppers in a casserole dish with the cavities facing upwards.

Steps:

  • Steam the spinach above an inch boiling water until just wilted, about two minutes; or wilt in a large frying pan with the water left on the leaves after washing. Remove from the heat, rinse with cold water and squeeze out excess water. Chop fine, and set aside.
  • Heat 1 tablespoon of the olive oil over medium heat in a heavy 10-inch nonstick skillet. Add the bell peppers. Cook, stirring often, until tender, five to eight minutes. Add the garlic and salt to taste, stir for about half a minute, and stir in the chopped spinach and the marjoram. Stir together for a few seconds, then remove from the heat and set aside.
  • Beat the eggs in a large bowl. Stir in the salt (about 1/2 teaspoon), pepper, milk, spinach and red peppers. Clean and dry the pan, and return to the burner, set on medium-high. Heat the remaining tablespoon of olive oil in the skillet. Drop a bit of egg into the pan; if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Tilt the pan to distribute the eggs and filling evenly over the surface. Uncover the pan and place under the broiler, not too close to the heat, for one to three minutes, watching very carefully to make sure the top doesn't burn (at most, it should brown very slightly and puff under the broiler). Remove from the heat, shake the pan to make sure the frittata isn't sticking, and allow it to cool for at least five minutes and for as long as 15 minutes. Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a sharp knife, cut off the tops of each bell pepper. Use the knife to help cut out and remove the seeds and ribs from inside the peppers.
  • Place the peppers in a lightly greased roasting pan and set aside.
  • Heat the oil in a large skillet over medium-high heat. Toss in the onion, cumin, oregano, paprika, salt, and black pepper, and sauté until the onions have softened, about 2-3 minutes.
  • Toss in the garlic and sauté until fragrant, about 30 seconds.
