- In a large non-stick pan, crumble and cook turkey until no longer pink, about 8 minutes.
- Remove from pan.
- Wipe pan clean with paper towel and reserve for cooking eggs.
- Break eggs into a large bowl and whisk until yolks and whites are well blended.
- Season with salt and pepper.
- Pour eggs into reserved pan and scramble until desired doneness.
- In order, top each tortilla with turkey, cheese, eggs and salsa.
- Fold and serve.

- Heat oil in a medium skillet over medium-high. Add onion and garlic; season with salt and pepper and cook, stirring occasionally, until onion is translucent, about 5 minutes. Add turkey and cook, stirring, until heated through, about 2 minutes. Stir in salsa and heat through, about 1 minute more.
- Place a tortilla directly on a gas flame or in a heavy skillet over high heat. When edges begin to char, about 15 seconds, turn; cook second side until bubbles form all over surface, about 15 seconds more. Wrap in a clean kitchen towel. Repeat with remaining tortillas. Layer each tortilla with mashed sweet potatoes, then turkey mixture. Top with salsa, sour cream, cheese, and eggs. Serve, with lime wedges.

- Heat the oil in medium non-stick skillet over medium heat. Add the onion and cook until soft, about 4 minutes. Add the zucchini, the salsa, and a couple tablespoons of water. Cover, cook for 5 minutes, or until the squash is tender. Transfer the vegetable mixture to a bowl with a spoon.
- Squish the sausage meat from its casing into the same skillet. (Discard the casings.) Break the meat up with a wooden spoon. Cook the meat over medium heat for 3 to 5 minutes or until it loses its color. Add the meat to the vegetables. Add the cheese and stir. Set aside.
- Cut avocado in half. Using a spoon, scrape the avocado from the skin into another bowl. Smash the avocado with a fork and season with salt and pepper.
- Wrap the tortillas in moist paper towels. Heat in the microwave for 1 minute or until warm. Lay out the tortillas and divide the turkey mixture evenly on top. Top with lettuce and avocado, fold the tortillas over and serve with salsa.
TURKEY TACOS
Thinly sliced turkey, well-seasoned and pan-seared, makes an excellent quick taco filling. These actually bear more resemblance to authentic Mexican food than all those crisp ground beef-filled tacos. This recipe can be assembled quickly from things that are easy to keep in the house, but can be adapted to include leftovers in your refrigerator. If you have only pink beans, use them instead; add tomato slices, if you have them, or other pickled vegetables instead of the shallots.

- Combine turkey scallops in a mixing bowl with oil, salt and pepper. Heat the grill or dry cast-iron pan over high heat until smoking. Sear the turkey slices about 1 minute per side. Transfer to a cutting board. Chop into 1/2 inch strips and reserve in a bowl with the juices from the board.

- Make the tzatziki and relish at least 1 hour ahead or up to 2 days in advance so the flavors meld together.
- For the tzatziki, shred the cucumbers and blot with a paper towel or clean kitchen towel to remove as much moisture as possible. Mix together the shredded cucumbers, strained yogurt, garlic, vinegar and lemon juice. Add dill and salt and pepper to taste. Cover and keep in the fridge until serving.
- For the relish, gently mix olive oil, vinegar, tomatoes, cucumbers and onions in a medium bowl and add salt and pepper as desired. Cover and let sit in the fridge until serving.
- For the meat, in a large skillet over medium-high heat, sauté ground turkey and onions until turkey is no longer pink, drain grease. Season with salt and pepper, as desired. Decrease temperature to low. Add oregano, garlic, tomato paste, and red wine vinegar to skillet and stir until meat is coated with seasonings.
- To serve, add meat, relish, and tzatziki to a pita and enjoy.

- Make the tomatillo salsa: Place the tomatillos in a medium saucepan and cover with water. Bring to a boil, then reduce the heat to low. Simmer until the tomatillos have turned darker green in color and some of the skins have started to burst. Remove from the water and set aside to cool.
- In a food processor, combine the jalapeño, garlic, onion, cilantro and cooled tomatillos. Blend until the cilantro and onion have broken down, but you can still see the tomatillo seeds. Be careful not to overblend. Season with the lime juice and salt.
- Make the turkey filling: Heat the olive oil in a large skillet over medium heat. Add the onion and cook until starting to soften and caramelize, about 10 minutes.
- Increase the heat to medium-high and add the ground turkey. Season with the salt, Hearty spice blend, and chili powder. Stir occasionally, allowing the turkey to brown slightly. Once the turkey is cooked through, about 5 minutes, remove the pan from the heat.
