VANILLA CARAMEL SYRUP - FOR COFFEE OR ESPRESSO
This will replace the expensive syrup you buy to make flavored coffee or espresso. I think it is as good as "Torani" or "Davinci". This recipe will nearly fill an empty 23 oz. bottle.

Steps:
- Slice vanilla beans lengthwise with a sharp knife, use sharp edge of knife to scrape out the inside of the bean against the cutting board.
- Put the scrapings and the outer beans in a sauce pan.
- Put all other ingredients in the pan and heat on low stirring often for about 10 minutes.
- Turn heat up to medium for a few more minutes (3-5) stirring constantly.
- Do not boil.
- Filter your hot syrup through a Melitta and coffee filter or through a strainer and cheese cloth.
- This is to remove the bean skins and any sediment.
- Cool syrup and pour into a tall glass bottle, an old wine bottle or empty coffee syrup bottles work great and are the right size.

COFFEE CARAMELS
For a softer caramel, heat the syrup to about 240 degrees. The traditional temperature is 245 degrees. Prep time includes the cool-down time.

Steps:
- Have ready a candy thermometer, wooden spoon, pastry brush and cup of hot water for brushing sugar crystals from the sides of the pan.
- Butter generously an 8 or 9 inch metal baking pan and set aside. Do not use glass; the piping hot candy may break it.
- Combine the heavy cream and espresso powder in a heavy 3-quart saucepan. Place the pan on medium-low heat and heat the mixture, stirring, until the coffee dissolves. Add both sugars, the corn syrup, butter and condensed milk.
- Raise the heat to medium-high and cook the mixture, stirring, until the sugar is dissolved and the butter is melted, about 5 minutes.
- Bring the syrup to a boil, cover the pan and cook the syrup for 3 minutes. Remove the lid. Dip the brush in water and brush the sides of the pan. Attach the thermometer inside the pan.
- Cook the syrup, without stirring, swirling the pan by the handle to cook evenly, until the candy reaches 240 to 245 degrees, frequently brushing the sides of the pan with the damp brush. This should take 13 to 14 minutes.
- Remove the thermometer. Add the vanilla extract and swirl the pan to combine with the syrup.
- Immediately pour the candy into the baking pan. Smooth evenly with the wooden spoon on a metal spatula. Set the pan on a wire rack to cool for 25 to 30 minutes.
- Using a sharp knife, mark the top of the cooled candy into 1-inch squares for easier cutting. The candy will still be warm.
- If candy is still not firm, let cool for a few more minutes. Then turn the candy out onto a chopping board, top side up. Using a large, sharp, buttered knife, carefully cut into 1-inch pieces, using marking on top as guide.
- Spread the candy pieces on a sheet of buttered foil or wax paper and cool completely on wire racks.
- For storing, wrap each piece in a square of wax paper or candy wrappers, or place between layers of wax paper in an airtight container.

CARAMEL MACCHIATO
If you've got an espresso/cappuccino machine you're well on your way to recreating a top-choice Starbucks coffee drink. For the caramel part, you can use any caramel sauce that you find in the grocery store near the ice cream toppings. Pick your favorite. Just note that to make this recipe work best you'll only need 3 tablespoons of a richer caramel sauce (like the stuff Starbucks uses), but more like 4 tablespoons of a lighter sauce (such as fat-free Smuckers). For the vanilla syrup you can use the bottled syrups, such as those made by Torani, or just whip up a your own clone from scratch. By the way, if you want to make this clone super accurate, pick up bottles of the authentic vanilla syrup and caramel sauce sold in Starbucks stores.

- You can use vanilla syrup from a bottle for the drink or make your own vanilla syrup following this Top Secret Recipe: Simply combine 2 cups water and 1 1/2 cups sugar in a medium saucepan and bring to a boil.
- Reduce heat and simmer for 5 minutes, then add 3/4 teaspoon vanilla extract.
- Remove from heat and cool.
- Store in a covered container.
- To make your coffee drink, add two tablespoon of vanilla syrup to a 16-ounce glass.
- Add 1/2 cup fresh brewed espresso followed by 8 ounces of steamed milk.
- Add 3 to 4 tablespoons caramel sauce to the drink.
- Stir before drinking.

easy and cheaper than buying it and definitely cheaper than buying a coffee from starbucks! From the joy of cooking Edit: I would like to point out that this recipe comes from The Joy of Cooking and is, therefore, not a troll. I have made it successfully several times as have other people. If you are having a problem it is possible that you may not be letting the sugar actually dissolve. This process takes several minutes and you will know you have achieved it when the syrup is almost clear and you don't have any granules on the bottom while you stir.

- mix 1/4 cup water and all sugar in a saucepan over medium-high heat til sugar is dissolved. DO NOT LET IT BOIL UNTIL SUGAR IS DISSOLVED COMPLETELY.
- Turn heat to high and cover and let boil for two minutes.
- Uncover and stir gently while it continues to boil until it turns a nice deep amber color. Remove from heat.
- CAUTION: READ CAREFULLY: Stand back to avoid scalding yourself as mixture will begin to bubble rapidly when you do the next step.
- Add the rest of the water and then when the bubbles settle a bit the vanilla and salt and stir gently to mix. Let cool and it will keep in the fridge for up to six months.
VANILLA SYRUP FOR COFFEE
This is a copycat of the Torani-style flavored syrup. You can also use almond extract, hazelnut, or any other flavor. Easy and inexpensive, compared to coffee-shop prices! Makes a nice holiday or hostess gift.
