VEGAN COWBOY BURGERS (STEAMED)

A fabulous vegan restaurant in Studio City, CA does this amazing trick making seitan taste like a delicious burger. I'm doing my best to represent with this knock-off of the real deal.

Steps:

  • These are steamed burgers so before you begin, put your steamer pot on to boil. The recipe comes together very quickly and it's best if you can wrap 'em and put them right on to steam.
  • Mix dry ingredients well.
  • Mix wet ingredients well.
  • Combine wet and dry ingredients, knead until smooth, let rest.
  • Cut the dough into eighths and wrap each flattened patty in heavy duty foil.
  • Steam 40 minutes or until solid "burgery" consistency is reached.
  • COWBOY UP: Cut the seitan patties into slices about 1/8" thick, put them on a vegan-friendly bun, top with vegan mayo (recipe 90544 is a perfect Veganaise knock off) bbq sauce, a thick slice of tomato, onions and some lettuce leaves. Yeee-hah!

2 cups vital wheat gluten flour
1/2 cup nutritional yeast flakes
1/4 cup oats, finely ground or 2 tablespoons oat flour
2 tablespoons walnut meal
1 1/4 cups water
1/4 cup soy sauce
2 tablespoons barbecue sauce
1 tablespoon olive oil
4 garlic cloves, finely minced
1/2 teaspoon thyme
1/2 teaspoon ground allspice
1 teaspoon onion powder
1 teaspoon paprika

Steps:

  • Add walnuts to the bowl of a food processor and pulse until crumbly.
  • Add mushrooms and blend until finely chopped.
  • In a large skillet over medium heat, add 1 tablespoon olive oil and add the mushroom walnut mixture, cooking for 5-8 minutes or until all moisture has evaporated.
  • Add soy sauce and cumin and cook, stirring occasionally, until dry. Transfer mixture to a bowl.
  • Add 1 tablespoon of olive oil to skillet. Add the onion and cook, stirring occasionally, until semi-translucent, about 3 minutes.
  • Add garlic, salt, pepper, and tomato paste, and cook for for another 3-5 minutes until fragrant. Set aside.
  • Add black beans and onion mixture to food processor, and blend until mostly smooth.
  • Transfer mixture to bowl and add beets, rice, vegan mayo, worcestershire sauce, and liquid smoke, and stir until combined.
  • Add in vital wheat gluten and use hands to knead burger mixture together until all wheat gluten is fully incorporated.
  • Form burgers into 4 patties about 3-inches (7 cm) in diameter and 1-inch (2 cm) thick.
  • In large cast-iron pan, over medium-high heat cook patties about 5 minutes on each side.
  • Add on vegan cheese slices and melt.
  • Assemble burger with vegan mayo, lettuce, tomato, and red onion.
  • Enjoy!

  • Bring a large pot of water to a boil. Once boiling, add the textured vegetable protein and let simmer for 10-12 minutes. Drain the TVP and set aside.
  • In the bowl of a food processor, add the cooked beans, oil, maple syrup, tomato paste, soy sauce, nutritional yeast, spices, liquid smoke, and water. Process for 10-20 seconds, scraping down the sides if needed and process again until it forms a purée. It doesn't have to be completely smooth.
  • Add the rehydrated TVP and process for 7-10 seconds, or until the TVP is very finely chopped, the mixture should look like bolognese sauce. You don't want to have big chunks of TVP otherwise the burgers won't hold together well.
  • Transfer the mixture to a large mixing bowl and add the vital wheat gluten. Mix using a wooden first, and then knead with your hands for 2-3 minutes to develop the gluten. The mixture should be soft and have a slight elasticity.
