VIETNAMESE-STYLE TEMPEH WITH LEMONGRASS AND CILANTRO

This is from Robin Robertson's 'Rice & Spice'. Haven't tried this yet but it looks delish. Personally, I like to steam or boil tempeh for 10 minutes before using it in a recipe. The original recipe calls for using vegetarian 'fish sauce' or soy sauce.

Vietnamese-Style Tempeh With Lemongrass and Cilantro image

Steps:

  • Remove the though outer layer from the lemongrass and discard. Finely chop the remaining inner section and set aside.
  • Heat the oil in a large skillet or wok over medium heat until hot. Add the tempeh and stir-fry until browned, about four minutes. Add the bell pepper and lemongrass and stir-fry for one minute.
  • Add the soy sauce', vinegar, sugar, chile paste, and scallions and stir to combine.
  • Taste and adjust the seasoning if necessary.
  • Spoon over hot cooked rice and top with chopped cilantro.

1 tablespoon vegetable oil
8 ounces tempeh, cut into 1/2 inch cubes

VIETNAMESE RICE NOODLES WITH LEMONGRASS SHRIMP

Nearly every little shop in Vietnam serves some version of this satisfying, simple dish. Bowls of room-temperature rice noodles are festooned with wok-fried or grilled shrimp (or beef, pork or chicken), scented with lemongrass, splashed with a sweet-and-spicy dipping sauce, and then served with pickled vegetables and tender, aromatic herbs.

Vietnamese Rice Noodles With Lemongrass Shrimp image

Steps:

  • Make the pickled vegetables: Put carrot and daikon in a small bowl and sprinkle with sugar and salt. Add rice vinegar, toss well and set aside.
  • Make the dipping sauce: In a small bowl, stir together brown sugar, vinegar, lime juice, fish sauce, garlic, ginger and chiles. Stir in 1/2 cup cold water and let mixture sit for 15 minutes. (Leftover sauce will keep up to 3 days, refrigerated.)
  • Marinate the shrimp: Put shrimp in a shallow dish. Add fish sauce, brown sugar, garlic and lemongrass. Mix well to coat.
  • Meanwhile, bring a large pot of water to boil. Turn off heat and add rice noodles. Soak noodles, stirring occasionally, until softened, usually about 7 to 8 minutes. Drain and rinse with cold water. Leave in colander at room temperature.
  • Prepare a platter of lettuce leaves and herb sprigs for the table. Keep cool, covered with a damp towel.
  • Put oil in a wok or frying pan over medium-high heat. When oil is hot, add shrimp without crowding (work in batches if necessary). Cook for about 2 minutes per side, until lightly browned.
  • To serve, divide noodles among 4 large soup bowls, then top each with hot shrimp, pickled vegetables and a tablespoon or so of dipping sauce. Sprinkle with scallions and peanuts (and beans sprouts if using). Pass herb platter and remaining dipping sauce at the table, and encourage guests to customize bowls as desired.

1 1/2 pounds shrimp, preferably wild, peeled and deveined
2 tablespoons Vietnamese fish sauce
1 tablespoon light brown sugar
3 garlic cloves, minced
3 tablespoons finely chopped lemongrass, pale tender center part only
1 pound rice noodles, preferably rice vermicelli
1 or 2 small lettuce heads, with the leaves separated, rinsed and patted dry
3 cups mixed herb sprigs, such as cilantro, mint, basil, watercress and tender celery leaves
2 tablespoons vegetable oil
4 scallions, slivered
4 tablespoons crushed roasted peanuts
Handful of bean sprouts (optional)

  • Start by pickling the vegetables. In a medium shallow dish, combine 3/4 cup rice vinegar with 1/2 cup water. Toss in the carrots and onions, making sure the vegetables are fully submerged. Cover and let sit at room temperature for 30 to 60 minutes.
  • Meanwhile, marinade the tempeh. In a medium shallow dish, combine 2 tablespoons soy sauce, 2 tablespoons maple syrup, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, and 1 teaspoon garlic powder with 2 tablespoons water. Stir to combine. Add the tempeh and toss to coat. Let stand at room temperature for 15 minutes, tossing again halfway through to make sure it’s marinating evenly.
  • Heat a large non-stick skillet over medium-low heat and add enough oil to lightly coat the bottom. Add the tempeh in a single layer (reserving the marinade!) and cook until browned, about 3 minutes per side.
  • While the tempeh cooks, whisk 1/2 teaspoon arrowroot into the reserved marinade (optional, see Note). When all the tempeh is golden brown, add the reserved marinade and cook just until it thickens a bit, about 30 seconds. Turn the heat off.

  • In a small food processor, whirl the lemongrass to finely chop. Add the garlic and shallot and process until everything is minced, pausing to scrape down the sides as needed; set aside. (If you don’t have a small food processor, grate the lemongrass stalks and mince the garlic and shallot.) In a small bowl, mix together the sugar, sriracha, Bragg Liquid Aminos, and water. Set the seasoning liquid aside.
  • In a large skillet over medium heat, warm the canola oil. Add the lemongrass mixture and cook, stirring, for about 1 minute, until fragrant and no longer raw smelling. Add the tempeh and seasoning liquid, turn the heat to medium-high, and let the mixture bubble and fry for about 10 minutes. At first, press on the tempeh to break it into smaller pieces (ideally, separate into individual soybeans) to maximize flavor and crisping. When satisfied, leave the tempeh to sizzle, giving it an occasional stir and then spreading it out to cover the bottom of the pan so it cooks evenly.
  • Toward the end of the 10 minutes, when some of the tempeh is golden brown, add the sesame seeds (if using) and cook, stirring frequently, for about 2 minutes longer to brown the tempeh further. The mixture will feel lighter under the weight of your spatula. When most of the tempeh is golden brown, remove from the heat, stir in the green onions, and let rest for 5 minutes to deepen in flavor. Taste and, if needed, add salt, a pinch at a time.
  • Serve the tempeh warm or at room temperature, with the cucumber, if desired. If diners want more heat, pass additional sriracha.
