VIRGIN PEACH BELLINI
Created in Venice, Italy, then promoted in restaurants such as the Olive Garden, this drink is now widely popular in the US, particularly in the New York area. This is a non alcoholic version of the classic bellini.

Steps:
- Allow chopped peaches to defrost if using frozen. If using fresh peaches, put puree in freezer to chill about 1/2-1 hour before proceeding(or put peaches in freezer till they are really cold, about 1/2-3/4 hour.
- Place in blender with 1/2 cup sparkling cider. Blend until peaches are pureed.
- Divide puree evenly between 4 champagne glasses. Fill glasses with remaining sparkling cider. Serve and enjoy!

VIRGIN MANGO BELLINI
Did you know that the mango is the world's most popular fruit? Try it in this non alcoholic version of the famous bellini! You might want to make the sugar syrup early to give it time to chill. Adapted from Cooking Light magazine.

- Sugar Syrup:.
- Combine the sugar and water in a small saucepan: stir well. Bring the mix to a boil over medium high heat, and cook 45 seconds or until the sugar dissolves. Remove from the heat and let cool. Store the syrup in the refrigerator.
- Yield: 2 cups.
- Place the mango, lime juice, and sugar syrup in food processor. Process until smooth. Strain the mango puree and discard pulp. Pour 1/4 cup of the mango puree into each of 4 fluted glasses. Add 1/2 cup ginger ale(or sprite); slowly pour 1/2 teaspoons grenadine down inside of each glass. Don't stir before serving! Enjoy!

NINI BELLINI
I've named this beautiful cocktail after Leo Caplan's wife, Janine (or 'Nini' as she's known by her nearest and dearest). Leo made a really generous donation to a charity called Help a London Child, and in return I said I'd name a recipe in this book after his lovely wife! A peach Bellini is the classic Venetian cocktail, and my mate Arrigo serves loads of them in his world-famous establishment, Harry's Bar. Arrigo's grandad, Giuseppe Cipriani, opened Harry's in 1931, and because he was a bit of a genius he ended up inventing not only this beautiful cocktail but also another thing I absolutely love - carpaccio. The story goes that when Giuseppe first made this cocktail the sun was setting and the colours in the drink were the same as the colours in his favourite Bellini painting...you can work out the rest! You can also get nice results using tinned (canned) peaches if you can't find beautifully ripe flat peaches.

- I think this is best made just before serving, in front of your friends. Halve your peaches, remove their stones, then pop them into a liquidizer and blitz until smooth. Add a splash of water if needed and put the puree into a jug. If you don't have a liquidizer just use your hands to squeeze, mash and really push the peaches through a sieve so you get as much as possible of their wonderful flavour and the colour from their skins into the puree. You can get the puree as fine as you like, but I don't mind the thickness...it's quite rustic. Discard (or eat!) whatever is left behind in the sieve, then pour the Prosecco into the jug and gently mix together. Divide among six glasses right away, and top up with a little more Prosecco, if need be, and enjoy!
VIRGIN POMEGRANATE AND CRANBERRY BELLINIS

- Place the ice in a punch bowl. Add the simple syrup, pomegranate juice, and cranberry juice. Stir well. Slowly pour in the sparkling water. Garnish with lime slices, mint sprigs and pomegranate seeds, if using, and serve.
- Serving Suggestion: As an alternative to serving from a punch bowl, make the bellini mixture in a 6 to 8 cup capacity pitcher. Divide the pomegranate seeds between 12 champagne flutes. Add 1 slice of lime and 1 sprig of mint to each glass. Pour the bellini mixture into the prepared glasses and serve.
- In a saucepan, combine water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Take the pan off the heat and allow the syrup to cool.
