WALNUT QUICK BREAD

The perfect size for one or two people when baked in two mini loaf pans. Eat one now and store one for later. Freezes very well. Tastes best when tightly wrapped and allowed to set overnight. I like to use walnut or coconut oil, but any neutral/mild tasting oil will do fine. There are variations listed below.

Steps:

  • Preheat oven to 350°F - Spray two mini loaf pans or one 8x4 loaf pan.
  • Combine dry ingredients (except optional 1/4 cup nuts) in a med size bowl; set aside.
  • Crack the egg into a measuring cup and stir to break yolk.
  • Add milk up to the 3/4 cup mark; then add vanilla and oil.
  • Make a well in the flour mixture and pour wet ingredients into the dry ingredients.
  • Mix until combined. Don't over mix. If batter is very stiff add an additional tbsp milk.
  • Transfer batter to prepared pan(s).
  • Sprinkle on optional 1/4 cup chopped nuts and lightly press down so they adhere.
  • Bake for 38 minutes or until tested done.
  • Cool on a rack for 1/2 hour. While still warm, wrap well and let set overnight for best texture. Can be frozen.
  • Variations: Pecans/rum extract; Coconut/vanilla or coconut extract; Almonds/almond extract.

Steps:

  • Preheat the oven to 350.
  • Grease an 8 1/2 x 4 1/2 x 3 inch loaf pan.
  • Put the dates, walnuts, baking soda, salt and shortening in a bowl. Pour the boiling water over and stir. Let the mixture stand for 15 minutes.
  • Using a fork, beat the eggs and sugar together in a bowl. Add the flours and stir; the batter will be too stiff to mix well. Add the date mixture and mix briskly until the batter is well blended. Spoon into the loaf pan and bake 40 to 50 minutes. Check the loaf often; it is done when a few moist crumbs cling to a straw inserted in the middle of the loaf. The bread will continue to bake after it is removed from the oven. Do not overbake, or the loaf will be dry.
  • When the loaf is done, slide a knife around the edges of the pan and turn the loaf onto a rack to cool completely. This bread freezes well.

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Put the diced figs in a medium bowl and add the warm water. Let soak until softened.
  • Whisk the unbleached flour, cake flour, oats, baking powder, and salt together in a large bowl. Set aside.
  • Put the maple syrup, milk, eggs, egg yolks, and canola oil in a medium bowl and stir with the whisk to combine. Add the mixture to the dry ingredients, stirring with a spoon just until all the flour is moistened. This should be a wet batter, because the oats absorb a lot of the liquid during baking.
  • Fold the walnuts and figs into the batter (the figs do not need to be drained). Divide the batter evenly between two oiled 9- by 5-inch loaf pans. Bake for about 1 hour, until a toothpick inserted in the center comes out clean. (If your oven bakes unevenly, rotate the pans from left to right and front to back about halfway through the baking time.)
  • Remove the pans from the oven and use a pastry brush to glaze the tops of the loaves with maple syrup. Set them on a rack to cool for about 10 minutes. Turn the loaves out of the pans and set them on the rack to cool completely before serving. Wrap any leftovers tightly in plastic wrap and store at room temperature. They may also be frozen, wrapped first in aluminum foil and then in plastic wrap or a heavy-duty freezer bag.

  • Preheat the oven to 350 degrees. Butter two 9-by-5-inch loaf pans. Line with parchment paper, butter the parchment and set aside.
  • Beat butter and the sugars in a stand mixer with paddle attachment and mix on medium speed until fluffy. Add eggs one at a time, beating between each addition. Add oil and vanilla and stir to combine.
  • Whisk together flour, baking soda, baking powder, salt and cinnamon in a medium bowl. Mix half the dry ingredients into butter mixture and stir together. Stir in remaining dry ingredients with a spatula, along with cranberries, pear, walnuts and sesame seeds; stir until batter is evenly moistened.

  • The recipe directions are written for instant yeast; to use active dry yeast, dissolve it in the water first. Also, be aware that your rising times will be longer.
  • Mixing In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly floured or lightly greased surface, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. (You may also knead this dough in an electric mixer or food processor, or in a bread machine set to the dough or manual cycle). Transfer the dough to a lightly greased bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 to 2 hours, depending on the warmth of your kitchen.
  • Shaping Transfer the dough to a lightly oiled work surface, and shape it into an 8-inch log. Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 90 minutes, until it's domed about 1 inch above the edge of the pan. A finger pressed into the dough should leave a mark that rebounds slowly.
  • Bake the bread in a preheated 350°F oven for about 35 to 40 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or measuring its interior temperature with an instant-read thermometer (it should register 190°F at the center of the loaf.)   • In a large bowl, thoroughly stir together the whole wheat and white flour, sugar, salt, and yeast. Vigorously stir in the water, scraping down the bowl and mixing until the dough is well blended and smooth. If the mixture is too dry to incorporate all the flour, stir in just enough water (a bit at a time) to blend the ingredients; don't over-moisten, as the dough should be very stiff. Brush or spray the top with oil. Tightly cover the bowl with plastic wrap. If desired, for best flavor or for convenience, you can refrigerate the dough for 3 to 10 hours. Then let rise at cool room temperature for 12 to 18 hours.
  • Spread the larger amount of walnut halves on a baking sheet and lightly toast, stirring several times, in a preheated 325°F oven for 10 to 15 minutes, or until fragrant and just lightly browned. Let cool. Chop finely (in a food processor, if desired).
  • Vigorously stir the cooled walnuts into the dough. If it is not stiff, stir in enough additional whole wheat flour to make it hard to stir.   • To make glaze: Using a food processor, process egg and 1/2 teaspoon salt with steel knife for 2 seconds.
  • Remove and set aside but do not clean work bowl before proceeding.
  • To make bread: Grease or oil large bowl and set aside.
  • Combine water, brown sugar and yeast in measuring cup stirring to blend.
  • Let stand until foamy (10 minutes).
