COCONUT WASHBOARDS

Steps:

  • In a large bowl, cream butter, shortening and sugar until light and fluffy. Beat in eggs. Gradually add water and vanilla; mix well. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture and mix well. Fold in coconut. Cover and refrigerate for 2-4 hours. , Shape into 1-in. balls. Place 2 in. apart on greased baking, sheets; flatten with fingers into 2-1/2-in. x 1-in. rectangles. Press lengthwise with a floured fork. Bake at 400° for 8-10 minutes or until lightly browned. Cool 2 minutes before removing to a wire rack to cool completely.

Steps:

  • Preheat oven to 350°F.
  • Using an electric mixer, cream the butter and 1 C of the sugar, about 1 minute.
  • Beat in the eggs, one at a time, blending well after each, until the batter is fluffy and pale yellow, about 2 to 3 minutes.
  • Stir in grated lemon peel.
  • In a medium bowl, wisk together flour and baking powder.
  • Using a wooden spoon, fold the flour into the egg batter.
  • Mix well. Gently knead the dough in the bowl for about 5 minutes.
  • Place the remaining 1/2 C of sugar in a shallow dish.
  • Shape pieces of dough into 1&1/2 inch balls.
  • Roll in the sugar and place on parchment-lined or lightly greased cookie sheets, 2 inches apart.
  • Flatten gently with tines of a fork to make horizontal lines.
  • Bake for 20 minutes or until a light golden color.

Portuguese Washboard Cookies (Lavadores) image

Steps:

  • Preheat oven to 350°F.
  • Mix the butter with 1 cup of the sugar on medium high-speed for 1 minute. Beat in the eggs, one at a time, blending well after each, until the mixture is fluffy and pale yellow, about 3 minutes. Stir in the lemon rind.
  • In a medium bowl, whisk together the flour, baking powder & salt to combine. Fold the flour into the butter mixture using a spatula, mixing well. Gently knead the dough in the bowl for about 5 minutes.
  • Place the remaining 1/2 cup sugar in a shallow dish. Using a small cookie scoop, shape pieces of dough into balls, then roll in the sugar. Place the cookes on a parchment lined or lightly greased cookie sheet, 2 inches apart. Flatten the cookies gently using the tines of a fork or make the horizontal lines.
  • Bake for 18 - 20 minutes, or until a light golden colour. I like to rotate the cookie trays from top to bottom, halfway through the cooking process.
  • Cool on the cookie trays for about 10 minutes, then transfer to a cooling rack. Enjoy.
