WEIGHT WATCHERS TWO-BEAN CHILI
I found this recipe in the March/April 2008 issue of Weight Watchers magazine. It is a CORE recipe for those following the CORE plan and it is a points value of 5 for a serving of 1 cup of chili with 2 tablespoons sour cream and 1 tablespoon of scallions.

Steps:
- Heat the oil in a Dutch oven over medium-high heat.
- Add the beef and cook, breaking it apart with a wooden spoon until no longer pink, about 4 minutes.
- Add the onion, garlic, bell pepper, chili powder and cumin.
- Cook until the vegetables are softened, 3-4 minutes.
- Stir in the tomatoes, beans and salt and bring to a boil.
- Reduce the heat and simmer, uncovered, until the chili thickens slightly, about 15 minutes.
- Serve topped with the sour cream and scallions.

TWO-BEAN CHILI
I got this recipe from a Taste of Home publication awhile back - I previously had a favorite chili recipe that I loved and always used, but when I saw this recipe included refried beans (which I absolutely love), I had to try this! Now I have 2 favorite chili recipes (after making a few changes of my own). This particular recipe makes a large batch and it freezes GREAT.

Steps:
- In a soup kettle or Dutch oven, cook the ground beef and onion over medium heat until meat is no longer pink; drain.
- Stir in the remaining ingredients.
- Simmer on stove, uncovered, for 2-3 hours.

WEIGHT WATCHER'S 2 PTS SLOW COOKER BEEF CHILI
Not certain as to how many servings are in this recipe so the amount is only estimated. This is a very low fat chili, you can substitute ground turkey for the beef. This can also be made on top of the stove. 1/2 cup serving = 2 pts.

Steps:
- Cook the ground beef and garlic in a nonstick skillet breaking apart the meat with a spoon until well browned; drain off any fat very well, then return to skillet.
- Add in the bell peppers; cook until softened (about 5 minutes).
- Add in the chili powder and cumin and stir to coat.
- In the slow cooker, mix together tomatoes, beans, sweet onion, chilies and tomato paste, then stir in the beef mixture.
- Cover and cook on HIGH until flavors are blended (about 4-5 hours).
- Season with black pepper.

This was the featured recipe today in my Weight Watchers email: Chili doesn't get any easier than this-we used well-spiced convenience foods to boost the recipe's flavor while minimizing preparation and cooking times. Notes *If you can't find canned diced tomatoes with chipotle chilies, either use a 14.5 ounce can of plain diced tomatoes and add 1/8 teaspoon of chipotle chile powder to the mixture, or substitute a 14.5 ounce can of diced tomatoes with green chilies (the latter will be quite spicy). Substitute lean ground turkey for the beef if you prefer (could affect POINTS values).

Add garlic and frozen vegetable mixture; cook, stirring occasionally, until vegetables thaw and any liquid evaporates, about 3 minutes. WEIGHT WATCHERS LENTIL AND BLACK BEAN CHILI (6 POINTS)
If you enjoy lentils and black beans, then you should find this chili extremely satisfying!! The recipe called for 29 oz can diced tomatoes, fire roasted with chilies. That product is not available in Canada, so I added a can of chopped green chilies. If you are "one of those" who can take extreme heat, by all means, use fresh chilies with the seeds left in for that exta punch!!

- Place lentils in a large sauce pan and cover with water by several inches; bring to a boil. Reduce heat to low and simmer until lentils are tender but retain a little bite, about 10 to 15 minutes; drain well and set aside.
- Heat oil in a large stock pot over medium heat. Cook onion, pepper and garlic, stirring often, until vegetables are softened, about 10 minutes.
- Combine chili powder, oregano, cumin, cayenne and salt; add to pot and stir well to combine. Cook, stirring often, about 1 minutes.
- Add tomatoes and their juice, and beans to pot; stir well to combine. Cover pot and simmer so flavors can blend, about 5 - 10 minutes, Fold in lentils and cilantro; serve.
- Yeilds about 1 cup per serving.

This recipe came from a magazine. I have tweaked it a little to make it healthier. It's 6 points for 2 cups in the weight watchers points system. Great for those winter nights and football game Sunday! I use the crock pot and it makes 4 quarts (2 cups per serving, 8 servings).

- Ground the beef in a pan until cooked through. Drain and add to the crock pot.
- Add the pinto beans, kidney beans, beef broth and diced tomatoes to the crock pot.
- Dice the onion, green pepper, jalapeno.
- Spray pan with Pam and add the onion, green pepper and jalapeno until the onion starts to soften.
- Add the tomato paste and mix. Add the chili powder, oregano and cumin. Add to the crock pot.
- Cook for 4 hours on high, 6-7 hours on low.
