This is great for football gatherings when you want to serve something hearty and filling. It gets lots of compliments. Serve with bite-size pieces of bread and vegetables.

Steps:

  • Cut a large hole in the top of the loaf of bread to form a bowl; set onto a serving platter.
  • Melt the cream cheese in a large saucepan over medium heat; stir in the Cheddar cheese, mozzarella cheese, beer, and garlic salt; heat, stirring continually, until all the cheese is melted; pour the hot cheese mixture into the bread bowl.

Steps:

  • Hollow out the loaf of bread, making large pieces for dipping.
  • In a saucepan mix together the Cheese Whiz, beer (using just enough to thin out the cheese to a consistency good for dipping), and Tabasco (hot) sauce.
  • Heat to warm through.
  • Pour the cheese into the bread bowl and serve warm with bread pieces and crackers.
  • Enjoy!

This is the ultimate 70s party food. I remember my mother making this often for parties, etc. I asked for the recipe a few years ago. It sounds gross because of the cheese whiz but it is so addicting. If you have leftovers, you can put it under the broiler the next day to reheat and eat the cheese soaked bread bowl.

Steps:

  • Melt butter on low heat. Once melted, add flour and whisk smooth. Increase heat very slightly, observing and occasionally whisking while roux bubbles. Observe the initial smell, this is raw flour. Whisk occasionally and continue to smell until the scent of raw flour disappears. The importance of this step is that you want to cook the flour, but not brown it.
  • At this stage, you have 2 choices:.
  • 1. Simmer the sauce with the additional 1/3 c water for 20 minutes to fully thicken sauce and cook away alcohol from beer,.
  • Or.
  • 2. Simmer the sauce for 5 minutes with 1 Tbsp water,.
  • At the end of previous step, add Worcestershire sauce and Dijon mustard, whisk inches.
  • With heat on low/low-medium, begin whisking in cheese, at most 1/2 c at a time. Whisk until blended after each addition, then whisk occasionally until each batch is melted.
  • When all cheese is melted in, dip is ready.
  • Ideally, serve from small warming crockpot or fondue pot, or serve immediately in warm bowl or individual rammekins.
