WHITE CHOCOLATE PEANUT KRISPIES

Warning! Addictive! I got this recipe out of our local newspaper. They melt in you mouth. These go into my holiday gift tins every year and they are always a big hit. This recipe makes about 150 pieces, so unless you want that many, you may want to halve it.

White Chocolate Peanut Krispies image

Steps:

  • Melt chocolate in a double boiler or in the microwave, being careful not to over cook.
  • Stir in peanut butter, blend well.
  • Mix with other ingredients until well blended.
  • Drop by teaspoonfuls onto waxed paper. (about the size of a small walnut).
  • Let stand until set.

2 lbs white chocolate or 2 lbs almond bark
1 cup peanut butter
3 cups peanuts
3 cups miniature marshmallows
4 cups Rice Krispies

I am not a fan of white chocolate but my youngest son likes it so I'll post this for him. This recipe has peanuts and peanut butter too. Takes 2 hours to firm up. They freeze well. I found it in a community church cookbook that I bought at a book sale. Guessed the number of servings.

Steps:

  • In a large Pyrex dish, melt the chocolate in a 200 degree oven for at least 10 minutes.
  • Add the peanut butter while in oven about 2-3 minutes.
  • Take the dish out of the oven and mix.
  • Add marshmallows; mix well.
  • Add peanuts and rice krispies; mix well.
  • Spoon out with teaspoons onto wax paper and let stand about 2 hours.
  • Refrigerate in air tight containers. Or you can freeze them.

I subscribed to a food blog called Slashfood, which featured this recipe recently. Of course, I just had to go and make it. It satisfies on so many levels, you can't even begin to count them!

Chocolate Dipped Peanut Butter Rice Krispies image

Steps:

  • Melt the butter over low heat in a large pot.
  • Stir in the marshmallows and cook until fully melted and no marshmallow white remains.
  • Stir in the peanut butter until combined.
  • Stir in the cereal until distributed evenly through the marshmallow mixture.
  • Pour out onto a lightly greased rectangular baking dish (9 by 13 inches).
  • Smooth out the top of the treats by moistening your hands with a little water and using the palms of your hand to press down gently. Don't press down too hard or else your treats will be too dense.
  • Set aside to cool.
  • Once the treats have cooled, melt the chocolate over low heat.
  • Cut the treats into even squares and quickly just shallowly dip the top side of the treats into the chocolate.
  • Turn chocolate side up and set in a baking dish or on a rack until set.

PEANUT BUTTER KRISPIES

This recipe was handed down from my great-grandmother. I'm not sure when traditional marshmallow krispie treats came on the scene, but this recipe could have preceded it! These are what I grew up on. I do not like marshmallows, so I find this recipe to be perfect. You can also top with melted chocolate if you like. Original recipe calls for 1 cup sugar, but I found it to be too sweet, so I cut it in half. You may wish to add more.

Steps:

  • Bring corn and sugar to a boil, and remove from heat.
  • Stir in peanut butter until smooth.
  • Add rice krispies and stir to incorporate.
  • Dump into a 9x13 pan and press down.
  • Cut into squares, and enjoy!
