WHOLE-WHEAT VEGAN WAFFLES
These dairy- and egg-free waffles are both crisp and tender-and so simple to make. Be sure to use refrigerated soy milk instead of the shelf-stable kind: There are fewer additives, which can greatly affect the final texture and taste of a recipe.

- Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F if using to keep cooked waffles warm.
- Whisk together the flour, sugar, baking powder, cornstarch and 3/4 teaspoon salt in a large bowl. Whisk together the soy milk, oil and vanilla in a medium bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it is OK if there are some lumps).
- Generously spray the top and bottom of the waffle iron with cooking spray. Fill each compartment almost completely, and spread the batter to the edges. Close the lid and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Serve with maple syrup, nut butter or fruit preserves.

WHOLE GRAIN WAFFLES
I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

- Preheat a waffle maker according to manufacturer's directions.
- Whisk whole wheat flour, all-purpose flour, oat flour, sugar, baking powder, and salt together in a bowl. Whisk egg yolks, milk, canola oil, and vanilla extract in a separate bowl. Beat egg whites in a third bowl (not plastic) with an electric mixer until soft peaks form when you lift the beaters straight out of the beaten eggs, 1 to 2 minutes.
- Make a well in the dry ingredients and pour the milk mixture into the well; mix batter until smooth. Gently fold the egg whites into the batter, retaining as much volume as possible. Let batter stand until slightly thickened, about 5 minutes.
- Pour 1/2 cup of batter, or amount recommended by the manufacturer, onto the waffle maker; close lid and bake waffle until browned and crisp, 2 to 4 minutes.

WHOLE WHEAT AND FLAX WAFFLES
The original recipe was made by my nana for years and years. Then my mom made it for me growing up, and now I make these waffles myself (but with a couple of healthy changes) They still taste just as good as the did when I was a kid. We serve them sometimes for breakfast, but in our family waffles have almost always been served for dinner. When you can't think of anything else to make.

- Mix dry ingredients.
- Mix wet ingredients separately.
- Mix dry and wet together whisk until smooth.
- Pour about 3/4 of a cup of batter at a time onto the waffle iron.
- You will begin to see steam coming out of the iron.
- Cook the waffles until the steam is almost gone.
- Any waffles we don't eat right away get put into the freezer, and we pop them in the toaster for a quick breakfast or snack.

- Preheat a waffle iron to medium-high.
- Whisk the flour with the oats, sugar, wheat germ, baking powder, cinnamon, and salt in a medium bowl. In another medium bowl, lightly whisk the eggs, then add the milk, butter, and oil.
- Gently stir the wet ingredients into the dry ingredients with a wooden spoon, to make a batter. Take care not to overwork the batter, it's fine if there are a few lumps.
- Pour 1/3 to 1/2 cup of batter per waffle (it depends on the size of your waffle iron) and cook until the outside of the waffle is crisp and inside is cooked through, 3 to 5 minutes. (The time varies depending on the size and spread of a waffle iron). Serve warm with maple syrup. Repeat with remaining batter.
VEGAN WHOLE WHEAT BANANA FLAX WAFFLES
Delicious! I estimated the measurements by checking out various recipes for other non-vegan waffles and subbed the eggs for mashed banana and the flavor was wonderful. Best with fresh berries and real maple syrup.

Freeze between layers of waxed paper in a freezer container. Reheat waffles in a toaster or toaster oven on medium setting.
