LEMON AND WALNUT WAFFLES

- Preheat the oven to 225 degrees F.
- In a large bowl sift to combine the flour, baking powder, 2 tablespoons of the sugar and salt. In small bowl whisk the egg yolks until smooth, then add the milk, vegetable oil, lemon extract, and lemon zest. Make a well in the center of the dry ingredients. Pour in the liquid ingredients and gently stir the batter, with a wooden spoon, until just combined. Be careful not to overmix. You can use a hand beater or a stand mixer on low speed, if desired.
- In a very clean bowl, whisk the egg whites until foamy. Add the remaining sugar and beat until soft peaks form. Gently fold the whites into the batter. Pour about 1/4 cup to 1/2 cup batter into an oiled waffle iron, sprinkle with walnuts, then close the iron. Cook until golden brown, about 5 minutes, depending on waffle iron settings. Transfer to a serving platter and keep warm in a low oven. Repeat with remaining batter. Serve warm with maple syrup.

- To make blueberry sauce, combine 1 cup of the blueberries, white grape juice, and honey in a medium saucepan. Heat until just bubbly around edges. Cool slightly.
- Transfer to to a blender and blend until smooth. Transfer to a serving bowl, and add remaining blueberries. Makes about 1 2/3 cups sauce.
- Waffles: in a medium bowl combine both flours, walnuts, baking powder, and baking soda.
- In a separate large bowl, beat the egg whites with an electric mixer until very foamy. Stir in buttermilk and oil. Gradually add flour mixture, beating by hand until smooth.
- Bake waffles according to manufacturer's instructions. Serve warm waffles with blueberry sauce.

- Toast waffles according to package directions. Spread four waffles with Nutella. Layer with bananas and strawberries. Spread remaining waffles with peanut butter; place over top.

HEALTHY AND YUMMY WAFFLES
My husband loves to make these waffles on weekends. He usually makes a double batch so that we can freeze the extras and enjoy a healthier version of Eggos on busy weekday mornings. These waffles are low in fat and made from half whole wheat flour, but they taste delicious! My picky kids love them! We got this recipe years ago from Eating Well magazine.

Steps:
- In a large bowl, stir together flours, baking powder, salt, and baking soda.
- In a separate bowl, whisk together buttermilk, egg yolk, vanilla, and oil.
- Add to the dry ingredients and stir with a wooden spoon until just moistened.
- In a grease-free mixing bowl, beat the 3 egg whites with an electric mixer until soft peaks form.
- Add sugar and continue beating until stiff and glossy.
- Whisk 1/4 of the beaten egg whites into the batter.
- With a rubber spatula, fold in the remaining egg whites.
- Preheat waffle iron.
- Brush the surface lightly with oil.
- Fill the iron 2/3 full.
- Cook for 5-6 minutes, or until the waffles are crisp and golden.
- Repeat with the reamaining batter, brushing the surface with oil before cooking each batch.
