SLOW-COOKED, TEXAS-STYLE BEEF BRISKET
This slow-cooker recipe comes directly from the heart of a wonderful Texas cook who makes the best brisket in the world! Yay, Papa Louis! He shared it with me years ago, via my sister (his daughter-in-law). I change it from time to time by adding ingredients to make it more Mexican (serve it with tortillas), or leave it as is and serve it with fresh rolls.

Steps:
- Place the beef brisket in a large slow cooker with the fat side up. Pour the coffee over the meat. Cook the brisket on LOW for 24 hours.
- Meanwhile, stir together the ketchup, cola beverage, Worcestershire sauce, mustard, liquid smoke, and brown sugar in a bowl until well blended. Refrigerate until needed.
- After 24 hours, remove and discard any fat from the brisket. Use a fork to pull apart and shred the meat. Pour the sauce over the meat, stirring to coat evenly, and cook 1 hour longer.

BRUNCH BRISKET
Steps:
- Season both sides of the brisket with the salt and a few turns of pepper.
- In a large skillet or pot, heat the oil over medium-high heat. Sear both sides of the brisket until browned, 4 to 6 minutes. Transfer it to a slow cooker.
- Add the onion to the skillet and cook, stirring, until soft, 5 to 7 minutes. Add the fennel seeds, sage, crushed red pepper, cayenne, thyme, rosemary and garlic and cook, stirring, for 2 more minutes. Pour 1/2 cup hard cider into the pan and allow it to loosen any browned bits stuck to the bottom of the pan (use a spatula to help scrape them up). Pour the whole mixture into the slow cooker. Add the apple, maple syrup, wine, and remaining 1 cup cider to the slow cooker.
- Cover and cook on low for 8 to 10 hours, or overnight. Remove the brisket to a cutting board and let it sit for 15 minutes. Trim off any excess fat, slice against the grain, and then transfer it to a serving dish. Carefully pour the mixture from the slow cooker on top of the brisket, sprinkle with the chopped chives and serve.
BBQ BRISKET

- Mix together the paprika, salt and pepper, sugar, and cayenne. Rub the spice mixture all over the brisket and refrigerate for 2 hours or overnight.
- Preheat oven to 350 degrees F.
- Place the brisket in a large casserole or Dutch oven and pour the sauce over the top, hocks and all. Cover and cook until brisket is fork tender and can easily be shredded, about 3 hours. Transfer the brisket to a platter. Skim and discard the fat from the top of the sauce. Shred or thinly slice the brisket. Serve.

Lower the heat, and simmer, uncovered, stirring occasionally, until deep red in color and has thickened, about 20 to 25 minutes. Adjust seasoning salt with pepper. Sauce will keep covered in the refrigerator for up to 3 days or freeze for up to 1 month.

Don't worry, this brisket isn't as hard as it sounds, though it does cook for 24 hours in the oven. Perfect for a dinner party or holiday. Smells sooo good in the oven.

- Preheat oven to 200.
- Place brisket in baking dish, fat side up.
- Pour coffee over brisket, seal or cover and bake for 24 hours.
- Remove from oven, scrape off fat and throw away. Throw away all liquids and fat products from pan. Mix sauce and pour over top of brisket and bake for one more hour.
- Let cool, and enjoy :].
- To freeze: Place in a rigid container and freeze.
- To heat: Reheat in a microwave on high until heated through for a quick meal!

OVEN BARBECUED BEEF BRISKET

- Preheat oven to 300 degrees.
- Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.

- Preheat the oven to 325 degrees F (165 degrees C).
- Season the brisket on all sides with salt and pepper, and place in a glass baking dish. Cover with a layer of sliced onions. In a medium bowl, mix together the beer, chili sauce, and brown sugar. Pour over the roast. Cover the dish tightly with aluminum foil.
- Bake for 3 hours in the preheated oven. Remove the aluminum foil, and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to the dish. Reheat in the oven with the sauce spooned over the sliced meat.

BUSY DAY BARBEQUE BRISKET

EASY, SUPER-DELICIOUS, 16-HOUR, SMOKY BRISKET
This is a recipe I got from a cousin after having it at a family gathering this summer. Yes, it really cooks for 16 hours! It was brought to the gathering frozen, then thawed and heated in the micro. Some ate it plain, others made wraps with flour tortillas, sour cream, lettuce, purple onion and cheese, etc. I even made a "gravy sandwich" by just soaking some bread in the juices. Really, really great! I haven't made it myself yet, but next time I need a big meat course for a group I'm going to make this for sure! YUM! Number of servings will vary depending on how served, adults vs kids, etc, but it will make 15-20 wraps easily.

BEEF BRISKET MARINADE
This is Mama's recipe for slow oven baked brisket. She alway marinates in one of those large, turkey size oven bags . Pop it in a 250 degree oven the next day for 4-5 hours( depending on the size of your brisket) . Makes a very flavorful dish. Leftovers make great sandwiches.
