This beautiful yet simple banana bread comes together with just three basic, easy-to-find ingredients- bananas, eggs and store-bought cake mix! The bananas make this quick bread moist and sweet, while the spice cake mix adds a hint of cinnamon and nutmeg. - Preheat the oven to 350 degrees F. Line a 9-by-5-by-3-inch loaf pan with parchment, leaving a 2-inch overhang on the longer sides.
- Mash 3 of the bananas with a fork in a large bowl until very smooth, reserving the fourth and least-bruised banana for the bread topper. Whisk in the eggs and cake mix until just combined and no lumps remain.
- Transfer to the prepared loaf pan, smoothing out the top with a small offset spatula. Slice the remaining banana in half lengthwise, then place the halves cut-side up on top of the batter, with the curves facing each other. Bake until deep golden brown and a toothpick inserted in the center comes out clean, about 50 minutes.
- Transfer the loaf pan to a wire rack to cool slightly, about 10 minutes. Run a knife or offset spatula around the edges of the pan, then invert the banana bread onto the wire rack and cool completely.
STOVETOP BREAD
Baking bread doesn't mean the house has to bake too. This recipe lets you bake a loaf on top of the stove instead of in it, keeping your kitchen cool.

- Butter a 9-inch Dutch oven and set aside.
- Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
- Transfer the dough to the prepared Dutch oven, cover and let rise until doubled in size, about 1 hour.
- Put the pot over medium-low heat and cook until the internal temperature of the bread registers 200 degrees F, 20 to 25 minutes. Let the bread cool in the pot for 5 minutes, then turn out onto a rack and let cool completely.
HOMEMADE BREAD FLOUR SUBSTITUTE
A baking component that often gets pricey-- AP flour is usually cheap and you can get generic/storebrand; I've yet to see storebrand bread flour. I got a box of vital wheat gluten on the clearance pile at Giant-- you can find this stuff at health food stores and big grocery stores, or purchase in smaller bulk quantities online. This is really convenient for recipes that call for only a cup or two of bread flour without necessitating purchasing and storing an extra sack that costs around $5-6 just for 5 pounds! The proportion is all the same-- 1 tsp gluten to 1 cup flour. If making 1/2 cup, use 1/2 tsp.

BASIC SOURDOUGH BREAD - 1, 2, 3 METHOD
This is a simple recipe of 1 part by weight starter, 2 parts by weight water and 3 parts by weight flour. Salt is 2% of the flour weight or 0.06 parts by weight. This recipe can be enriched for sandwich bread or buns easily by using milk instead of water and adding sugar and oil. This makes two 1 lb loaves. To make 2 medium loaves, increase ingredients by 50 %. This recipe as written can also make 1 large, 2 lb loaf free-standing or in a 9" x 5" loaf pan. Flo is a pretty french lady on another site who developed the 1-2-3 formula.

Steps:
- Starter Sponge: Add starter to the water and wisk together. Add flour, mix well, cover and let sit at room temperature (70 to 75F) until doubled in volume (6 hours or overnight).
- Dough: Wisk starter sponge into the water and add enough flour to make a thin batter. Wisk to aerate dough, forming some bubbles. Add the rest of the flour and mix well to incorporate.
- Cover the bowl and let rest for 20 minutes to 30 minutes.
- Add salt and knead for 8 minutes. Cover and let rest 5 minutes.
- Stretch and fold the dough once by stretching dough into a rectangle and folding letter-style side to side and top to bottom.
- Place in oiled container (straight sided is best) and mark the point on the container when the dough is doubled.
- Let rise in 75 to 80 F area for 1 hour.
- Stretch and fold the dough for the second time.
- Let rise in 75 to 80 F area for 1 more hour or until doubled in volume (total time may be 3 hours).
- Remove dough and divide into 2 pieces weighing 1 lb each and one piece the size of a ping-pong ball.
- Form smooth balls as a pre-shape and rest covered for 10 minutes.
- Shape into batards or torpedo or boule shapes. If resistant to stretching, let rest for 5 to 10 min and repeat.
- Place loaves on a parchment covered cloth folded to support all sides of each loaf and cover with oiled plastic.
- Place the small piece of dough in a small, straight-sided glass and mark doubled volume point with tape or marker or rubber band.
- Preheat oven to 425 F and add a cast iron skillet near the bottom of the oven to preheat as well.
- Let rise until 1 1/2 times the original volume. Watch the small piece as a guide.
- Add 1 cup of hot water to the skillet carefully to avoid breaking the oven door glass.
- Score the loaves with a double edged razor blade.
- Place parchment paper and loaves in the oven and using a flat baking sheet or a peel.
- Bake for 12 minutes and rotate pan for even cooking.
- Bake for 15 to 20 more minutes until browned or 205 F internal temp Cool on rack.
EATING SUBURBIA'S 5 MINUTES 3 BANANAS BANANA BREAD
While looking for something entirely different, I found this recipe, entitled "5 Minutes/3 Bananas/1 Loaf of Goodness" Banana Bread. As I'd been looking for a good, simple banana bread recipe for some time, I decided to add this one to my recipes here, because it definately fits the bill. Personally, I add nuts, as they're a must in banana bread in this house, but add whatever you like best in yours.

- Preheat oven to 350 degrees. Grease and flour 9x5" loaf pan.
- In large bowl, mix first 5 ingredients, then cut in the margerine or butter with a pastry blender until mixture resembles course crumbs (a potato masher works well for this, too)/ With fork stir in mashed bananas and beaten eggs, just until blended. Spread batter into a pan.
- Bake 55 minutes to 1 hour until toothpick comes out clea. Cool for 10 minutes on a rack, then remove from pan.

- Pour the warm water into a large bowl, and whisk in 4 teaspoons of bread flour, the yeast, and the white sugar until thoroughly combined and the sugar has dissolved. Allow to stand until the yeast starts to form creamy bubbles, about 5 minutes.
- Fit a dough blade into a large food processor, and place 3 1/2 cups of bread flour, the oats, whole wheat flour, salt, brown sugar, and vegetable oil into the work bowl. Start the food processor running, and slowly add enough of the water-yeast mixture to allow the dough to form a firm ball and pull away from the sides of the processor, about 1 minute. Process for another 30 seconds to knead.
- Place the dough into an oiled bowl, and turn to coat the dough with oil. Cover with a damp cloth, and allow the dough to rise until doubled, about 1 hour. Punch down the dough, and divide into 2 equal-sized pieces. Form each piece into a loaf; pinch the seams and ends closed.
- Grease 2 4x8-inch loaf pans, and place the loaves into the pans with the seam sides down. Allow to rise until the dough is 1 inch above the rim of the pans, about 1 more hour.
- While dough is rising, preheat oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until the tops are browned, about 35 minutes. Allow bread to cool in pans for 10 minutes, then turn out onto cooling racks to finish cooling.

3 VARIATIONS OF A GLUTEN FREE BREAD RECIPE - BREAD MACHINE
I have tried lots of variations of Gluten free bread but I wanted a recipe that I didn't have to search high and low for the different flours, this recipe has also cooked the best so far in my bread maker machine. Better yet I could get all the flours in one stop at the organic store. (Tip: Asian Markets have potato starch and tapioca and rice flour too) This recipe is Butter-Basted White Bread; I got this from a book in the library, I cannot remember the title or author. I make this bread for my mother and friend who cannot have gluten in their diet. They rave that this is better than the small store loafs and love that it cuts without crumbling and ideal for sandwiches, toast etc, they both prefer the 1 white/1 brown rice flour mix with linseed and sunflower seeds for taste and texture. The minimum setting I have on my bread machine is 4 hours, the bread cooks fine on this for me. Produces a smaller loaf than wheat bread loafs but still a decent size.

- Most of the ingredients can be placed straight into the baking pan of the bread maker in the order suggested in your manual. (Some place yeast on bottom, flour mix next, then sugar and liquids; other suggest the reverse order.).
- Place 1 & 1/2 tablespoons yeast in bread pan.
- Add all the flours, xanthan/guar gum, milk powder and salt.
- Add the sugar.
- Beat the eggs.
- Combine all the water, the butter, vinegar, and eggs. (If your bread machine manual recipes call for warm water, use that. If it has a pre-heating cycle, put in at room temperature.).
- Use the white bread setting at medium crust (if you have this selection). Alternatively 3-4 hour setting.
- NB:.
- 1. Be careful reading tablespoon and teaspoon (I have read it wrong on occasion and achieved a 'not so good loaf').
- 2. I recommend that you always go back to the ingredient list and check you have included everything (that isn't optional) before cooking.
- This bread freezes well, for convenience slice before freezing.
- WHITE & BROWN:.
- Exchange 1 cup or both cups of white rice flour for brown rice flour. The results are excellent.
- TENDER BUTTERMILK BREAD:.
- A tasty bread with a distinctive flavor, it seems to stay fresh longer than other breads. Some lactose-intolerant celiacs can use buttermilk, so this may be a boon for them if they are allergic to the soy in some of the baby formulas or the coconut oil in most of nondairy substitutes.
- Follow the recipe for White Bread, but substitute 1/2 cup powdered buttermilk for the milk powder and omit the vinegar. Follow bread machine making instructions as per normal.

- Combine all the ingredients in a large bowl. Mix with a wooden spoon just until everything is combined. Cover with plastic wrap and let sit for 12 to 20 hours.
- After 12 to 20 hours, your dough will smell like beer and appear bubbly. Using wet hands, place dough on a lightly floured surface. Fold the edges of the dough toward the middle and use your hands to shape the dough into a ball. Place the ball fold-side down on a floured tea towel. Sprinkle a little more flour on top of the dough ball and cover with another tea towel, or by folding the first tea towel in half. Let the dough sit for two hours.
- Half an hour before the second rise is finished, get ready by setting your oven to 450 degrees and putting your empty covered pot inside to heat up. See notes below on choosing a pot.
- Remove hot pot from the oven. Depending on the material of your pot, you may need to grease it with butter. This will make it easier when removing the finish bread. Pick up the towel holding the dough and dump the dough into the pot. Give the pot a gentle shake to even out the dough. It’s ok if it looks messy; it will even out once it’s baked. Place the covered pot back into the over for 30 minutes. Then, take the lid off the pot and cook uncovered for another 15 minutes.
