Steps:

  • Place the potatoes, carrots and cabbage in a 5-qt. slow cooker. Cut brisket in half; place over vegetables. Add the water, caraway seeds and contents of spice packet. Cover and cook on low for 8-10 hours or until the meat and vegetables are tender.

Corned Beef and Cabbage Dinner image

Steps:

  • Trim fat from meat.
  • Place in a 6-to 8-quart pot; add juices and spices from package of beef. Add enough water to cover meat. If no spice packet, add pepper and bay leaves. Bring to boiling; reduce heat. Simmer, covered, about 2 hours or until meat is almost tender.
  • Add carrots, parsnips, rutabaga, and onions to meat. Return to boiling; reduce heat. Simmer, covered, for 10 minutes.
  • Scrub potatoes; halve or quarter. Add potatoes and cabbage to pot. Cover and cook 20 minutes more or until vegetables and meat are tender.
  • Discard bay leaves, if used.
  • Remove meat from pot. Thinly slice meat across the grain.
  • Transfer meat and vegetables to a serving platter.

Steps:

  • Roll brisket into cylinder, and tie with twine. Place tied beef in pot. Cover with cold water and bring to a boil. Remove the scum as it appears. Reduce the heat and simmer for 10 minutes. If the liquid is salty after 10 minutes, start again with boiling water. Stick cloves in onion and put in pot. Place thyme, parsley, peppercorns and bay leaf into middle of cheesecloth and tie with twine, and put into pot. Simmer for 2 to 3 hours skimming any scum that appears on the surface. Transfer beef to a clean pot. Strain, cool and degrease cooking liquid. Add onions turnips, potatoes, carrots and cabbage, and optional cider if desired into pot. Cover with strained liquid and cook at a simmer for 1 hour more, or until you can pierce beef easily with a skewer. Remove the meat from the poaching liquid , cut the trussing strings and carve the meat into generous slices. Place them on a warmed platter. Arrange the cooked garnish vegetables around the meat. Sprinkle with chopped fresh parsley. Serve with horseradish cream sauce.

Irish Boiled Dinner (Corned Beef) image

Steps:

  • Rinse the beef brisket under cold water, and place in a large pot. Add enough water to cover the roast by 6 inches. Peel the onions, and place them in the pot with the roast. Bring to a boil, and cook for about 30 minutes at a rolling boil. Reduce heat to medium-low so that the water is at a gentle boil, cover, and cook for 3 1/2 hours.
  • Remove the lid from the brisket. Remove onions, and cut into wedges. Return them to the pot. Add carrots to the pot, then place the cabbage over the roast. Place the potatoes on top of the cabbage. Place the lid back on the pot, and cook for another 30 minutes, until potatoes are tender. The potatoes should be immersed in the water by now, but if not, keep the lid on so they can steam.
  • Remove the vegetables from the pot, and place in a separate serving bowl. Keep the corned beef in the pot until ready to slice and serve because it dries out quickly.

Corned Beef Dinner for St. Patrick's Day image

Steps:

  • Place corned beef in a 6-quart Dutch oven or heavy pot and pour in enough water to cover beef by 2 inches. Bring water to a boil, skimming the liquid occasionally to remove fat from top. Reduce heat to medium-low, cover Dutch oven with a lid, and simmer for 2 hours.
  • Arrange cabbage, potatoes, onions, and carrots around beef and return liquid to a boil. Lower heat to medium-low, cover Dutch oven, and simmer until vegetables are tender, about 40 minutes. Transfer beef to a serving platter, reserving 1 1/2 cups cooking liquid. Surround meat with the vegetables.

Corned Beef Dinner in the Crock-Pot image

Steps:

  • Place sliced onions, carrots, potatoes, and celery in bottom of the crock-pot.
  • Put in the rinsed beef brisket, fat side up. Add the juices and sprinkle with the spices from the seasoning packet.
  • Pour ale over all.
  • Sprinkle with pepper and add the bay leaf and rosemary.
  • Cover and cook on low 10-12 hours (or on high 5-6 hours), until beef and vegetables are done. During the last hour or two add the cabbage wedges. Please note that cook times may vary with different crock-pot models.
  • Remove brisket to cutting board and let rest 10 minutes before slicing. Always slice across the grain.
  • Serve corned beef and vegetables with horseradish & mustard on the side, with some thick slices of warm Irish Soda Bread slathered in real Irish butter!

Steps:

  • Cover; Place first 4 ingredients in crock-pot. DO NOT add vegetables. Cook on LOW 11 hours (get up early :).
  • Remove meat and transfer liquid to another large pot.
  • To the reserved liquid add potatoes.
  • Cook on medium high stove top for 20 minutes and then add carrots, cook five minutes more, add cabbage and cook an additional 20 minutes.
  • Meanwhilem, mix glaze ingredients. Spread glaze evenly over cooked brisket and bake meat (uncovered) for 30 minutes in oven at 350 degrees.
  • This should be done about the time the vegetables are cooked through.

New England Boiled Dinner (corned beef & cabbage) image

Steps:

  • Place corned beef in a large pot, cover with cold water.
  • Bring to a simmer, simmer for 5 minutes, then remove and rinse meat, empty the water out of the pan.
  • Place meat back in the pan along with the onion, garlic, the cloves, pickling spice and bay leaves.
  • Cover with 12 cups cold water, or more to cover the meat.
  • Bring back to a simmer, partially cover the pan, simmer for 3- 4 hours (adding more water as necessary to keep beef covered), until beef is tender, but not falling apart.
  • Remove the beef from the pot, wrap in foil, and keep warm.
  • Strain the cooking liquid, and add it back to the pot, discarding the onion and spices.
  • Bring the liquid back to a simmer, and add the vegetables in this order-- (you should end up with all the veggies in the pot together) cabbage--give it about 4 minutes, then add turnips--give them about 5 minutes, then add carrots--give them about 3 minutes, and then add potatoes, simmering for about 10-15 more minutes.
  • They should all be fork tender.
  • David serves it this way--slice corned beef thinly against the grain, place in a shallow soup bowl with vegetables, and ladle about 1/2 cup stock over all, with mustard and/or horseradish on the side.
  • We have it in dinner plates sliced, with our veggies on the side, and plenty of butter and salt and pepper on them.
  • Also great with crusty bread, and maybe some mustard or horseradish on the side.

1/2 medium onion, with skin on
2 cloves garlic, crushed
5 whole cloves
1 1/2 teaspoons pickling spices
