9 CUP HOLIDAY APPLE PIE
I made this huge delicious pie for Thanksgiving but it would be great on any holiday or special occasion. I used a 10-12 inch Pie tin that I had saved from a previous pie purchase @ Sam's Club. - 1. PREHEAT THE OVEN TO 425 DEGREES F. Wash core and peel the apples then slice thinly and place in a very large bowl. Alternate both varieties as you peel and slice, that way they will be evenly mixed together. Drizzle with the lemon juice, this prevents them from turning brown.
- 2. Add both sugars to a medium size bowl, then add the spices and salt, add the Wondra flour, then stir till it is blended well. You may want to divide the sugar mixture in half to have enough for each layer of the pie.
- 3. Now place the first pie crust into the pie tin, Now spread a layer of the sliced apples in bottom of pie tin. Sprinkle with sugar mixture. Repeat this step at least 2 or 3 additional times, alternating with the sugar mixture each time.
- 4. Finish with any remaining sugar mixture. Now dot the top of the pie with half of the butter.
- 5. Cover with top crust, sealing the top crust to the bottom crust. Then flute the edges. Make 6 or more slits in tip crust, this allows the steam to escape as the pie bakes.
- 6. Create an egg wash by beating the egg with 1 tablespoon of water then brush over the top of pie crust. This allows the crust to cook to an even golden brown color. Sprinkle top crust with white sparkling sugar,Optional if desired, or can use regular sugar.
- 7. Now line a shallow baking pan with aluminum foil and place pie in pan to catch any potential drips while pie is baking. Place in preheated 425 degree F. oven and bake for 15 minutes.
- 8. THEN LOWER TEMPERATURE TO 350 DEGREES F. for an additional 50 to 55 minutes or until pie is hot bubbly and golden brown on top. Remove from oven and allow to cool COMPLETELY before cutting and serving. SOMETIMES YOU JUST CANNOT WAIT! SMILE
- 9. APPLE PIE SPICE- Is a blend of spices made especially for baking apple Pies, and Apple like desserts, with the main ingredient being CINNAMON.

- Heat oven to 425°F. Make pie crust mix as directed for 9-Inch Two-Crust Pie, using 1/3 cup cold water--except trim overhanging edge of bottom pastry 1 inch from rim of plate.

In this very classic, cinnamon-scented pie, the apples are sautéed in butter before they're piled in the crust, ensuring that they're tender but not mushy. Use firm, crisp apples here, preferably all one kind so the slices cook evenly. Honeycrisp, Golden Delicious, Ginger Gold and Granny Smith apples are good options. (Honeycrisps will give you the sweetest pie, while Granny Smiths the most tart.) If using a glass or ceramic pie pan, consider parbaking the bottom crust. Glass doesn't conduct heat as well as metal, so the crust may not cook through if you don't parbake.

- Melt butter in a large skillet set over medium-high heat and add apples to the pan. Stir to coat with butter and cook, stirring occasionally, until the butter is evenly distributed, about 1 minute.
- In a small bowl, whisk together sugars, spices and salt. Sprinkle over the apples and toss to combine.
- Lower heat to medium and cook until apples have softened completely but still hold their shape, about 17 to 25 minutes. (Some varieties cook more quickly than others.)
- Sprinkle cornstarch evenly over the apples and continue to cook, stirring occasionally, until the apple mixture comes to a simmer and thickens slightly, about 2 minutes. Remove pan from heat, and stir in lemon juice and zest. Allow apples to cool completely (spreading them onto a rimmed baking sheet speeds this up). Apples can be prepared up to 24 hours ahead and refrigerated.
- On a lightly floured surface, roll half of the pie dough into a 12-inch circle. Transfer dough to a 9- or 10-inch metal pie plate, trimming it to leave a 1/2-inch overhang. Place crust in the freezer for 30 minutes or up to 24 hours.
- When ready to bake, place a rimmed baking sheet on the middle oven rack and heat oven to 425 degrees.
- Roll out the remaining dough on a lightly floured surface to a 10- to 11-inch circle. Remove pie crust from freezer and add the cooled filling in an even layer. Cover apples with remaining dough. Press the edges together, trim the excess dough, and crimp the edges with your fingers or a press down with the tines of a fork. (Using a fork might be easier if the bottom crust is too cold to crimp.) Brush the top of the pie with cream, milk, or some beaten egg, then sprinkle lightly with sugar if you like. Using a sharp knife, cut some steam vents in the top of the crust.
- Place pie on the hot sheet pan and bake for 20 minutes. - In medium bowl, mix 2 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. - Heat oven to 425°F. With floured rolling pin, roll one pastry round into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
- In large bowl, mix sugar, 1/4 cup flour, cinnamon, nutmeg and 1/8 teaspoon salt. Stir in apples. Spoon into pastry-lined pie plate. Dot with butter. Trim overhanging edge of pastry 1/2 inch from rim of plate.
- Roll other round of pastry. Fold into fourths and cut slits so steam can escape. Unfold top pastry over filling; trim overhanging edge 1 inch from rim of plate. Fold and roll top edge under lower edge, pressing on rim to seal; flute as desired. Cover edge with 3-inch strip of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking.
- Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust. Serve warm if desired.

HOLIDAY APPLE PIE
This is the pie I usually make for Thanksgiving and other holidays at our house. I always use Watkins brand pie seasoning blend, but you may use any good quality brand you prefer. I also often make my own crust, but you may use store-bought crust if you prefer. For the apples, I try to mix several types of baking apples for best flavor.

- Preheat oven to 425 F.
- Place bottom layer of pie pastry into a 9" pie plate and set aside.
- Cut up butter into small pieces and set aside in a small dish at room temperature.
- Combine apple slices with lemon juice, sugar, flour, apple pie seasoning, and salt, mixing gently to combine well, but without crushing the apple slices.
- Pour filling into pie plate.
- Sprinkle the butter pieces over the top evenly.
- Top pie with top layer of the pie pastry, crimping and sealing edges decoratively.
- Combine egg yolk and water and brush over entire surface of the pie with a pastry brush.
- Cut a few slits in the top crust to allow venting of steam.
- Set a foil lined cookie sheet on the bottom rack of your oven and set the pie on the center rack of your oven (the extra pan will help catch any drips).
- Bake for 15 minutes at 425F.
- Lower the oven temperature to 350 F and bake another 40-45 minutes, or until the crust is golden brown and the filling is starting to bubble.
- Let cool before slicing as this will be boiling hot when fresh from the oven (you may serve pie warm or cold).
- NOTE: I check the pie about halfway through the baking process and if the crust edges are getting too brown, I set a pie ring on top; If you don't have a pie ring, you can make one using foil.
