- For the salad: In a clear glass bowl, layer the salad ingredients in the order they appear above, concentrating the ingredients around the perimeter of the bowl and filling in any gaps in the center with lettuce as needed. Start with a good layer of iceberg on the bottom, followed by the tomato wedges, spinach and Perfect Hard Boiled Eggs. Sprinkle the egg layer generously with salt and pepper. Layer on the bacon, green onions and Cheddar, and end with the peas.
- For the dressing: Combine the mayonnaise, sour cream and sugar in a small bowl and mix well.
- Pour the dressing over the top of the peas and spread evenly, bringing the dressing all the way out to the edges of the bowl. Sprinkle with the dill and parsley. Cover and refrigerate until serving.
- Place the eggs in a saucepan, cover with water and bring to a boil. Turn off the heat and allow the eggs to sit in the water for 20 minutes. Drain off the water and add ice to the pan on top of the eggs. Set aside to chill.
NINE-LAYER SALAD
A tried-and-true staple in my family!! This is a wonderful salad with many different tastes and textures. The water chestnuts and peas add a wonderful crunch. Great to take to pot-lucks and picnics. You can add more or less of each ingredient to suit your taste, but I listed the amounts I usually use.

- In large salad bowl, layer ingredients in order given, except for mayonnaise, sugar, and bacon.
- In separate bowl, combine mayonnaise and sugar, and mix well.
- Spread mayonnaise mixture over top of salad.

- Toss to serve, or use large spoon to dig through layers to get a little bit of everything for each serving.

- Place the chicken, 1 1/2 tablespoons of cilantro, and vegetable oil in a skillet over medium heat, and pan-fry the chicken breasts until lightly golden brown, no longer pink in the middle, and the juices run clear, about 5 minutes per side. Remove the chicken and set aside. When cooled, cut into cubes.
- Place the bacon in the same skillet, and cook over medium-high heat, stirring often, until evenly browned, about 10 minutes. Mix the refried beans into the skillet with the bacon, and cook, stirring frequently, until the beans are hot and bubbling, 5 to 10 minutes. Mix the taco seasoning and sour cream together in a bowl.
- To assemble, spread the hot bean and bacon mixture into the bottom of an 8x8-inch glass dish. Sprinkle the chicken cubes over the bean mixture, then follow with these layers: 3/4 cup of Cheddar cheese, guacamole, sour cream mixture, and sliced tomatoes. Sprinkle the top with 1 1/2 tablespoons of cilantro, black olives, green onions, and 1/4 cup of shredded cheddar cheese.

- Chop or tear up lettuce and place in 9 x 13 dish
- Chop up celery and add on top of lettuce. Add a sprinkling of salt and pepper.
- Chop hard boiled eggs and add on top. Again, add a light amount of salt and pepper.
- Crush bacon and add on top of eggs.
- Add chopped tomatoes and green onions, then top with 2 cups cheese.
- Pour on 10 ounces partially frozen peas. (I just let the frozen peas set out while I'm preparing this dish. The peas will thaw enough by the time it's time to eat.)
- Stir together mayo and sour cream. Mix well. Spread on top of the frozen peas. Add salt and pepper to taste.
- Sprinkle remaining cheese on top. (I used cheddar, but Parmesan would be delicious too!)

This is a delicious side dish or meal. When going to family gatherings, potlucks or cookouts, I'm always asked to fix this dish.

Steps:
- Boil the eggs for 15 minutes and set aside to cool.
- Thaw out the corn and peas.
- Chop the lettuce up, rinse and dry very well.
- In a large aluminum pan, lay the lettuce evenly through out.
- Layer the chopped onions, boiled eggs, corn and peas through out the pan.
- Take a knife and spread the mayonaise over the lettuce and vegetables.
- Sprinkle the sugar on top of the mayonaise.
- Sprinkle the shredded cheese over the entire pan covering the mayonaise.
- Place the tomatoes on top, gently pushing them into the cheese.
- Cover with plastic wrap or aluminum foil.
- Place in the fridge until serving time.
