AARON TIPPIN'S MEXICAN CASSEROLE

Steps:
- Preheat oven to 350.
- Brown the meat and onion in a skillet.
- Add the taco seasoning and water, and let simmer for 5 minutes.
- In a baking dish (8 or 9 inch square), put one layer of tortillas, then 1/3 meat mixture on top, followed by layer of beans and layer of cheese.
- Repeat two more times, ending with cheese.
- Bake for 30 minutes, or until cheese is melted and beginning to brown.

MEXICAN CASSEROLE
This recipe is used with Recipe #48835. It's very tasty and once the beef base is done, it is so quick and easy to prepare.

Steps:
- Heat oil in medium pan and add the garlic, taco seasoning mix and cumin.
- Cook and stir until spices are fragrant.
- Add undrained tomatoes and thawed beef base.
- Simmer, uncovered for 15 minutes.
- Stir in beans and cilantro, heat through and serve.
- Goes well with tortillas and salad.

MEXICAN CASSEROLE
This is a quick and very easy casserole the is loaded with flavor. My best friend Julie gave me the recipe. I like to make it the day before and then heat it up because the flavors seem to get better. You can lower the fat by using baked tortilla chips and low fat cheese if you like.

Steps:
- Preheat oven to 350 degrees.
- Grease a 13 X 9 inch casserole dish, then sprinkle the crushed chips on the bottom.
- Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic and salt and pepper in a bowl.
- Place half the mixture evenly in the baking dish.
- Sprinkle half the cheese over the mixture.
- Cover with the remaining half of the chicken and bean mixture and sprinkle the rest of the cheese on top.
- Bake for 30 minutes.
- Let stand for 5 minutes before serving.
- Serve the garnishes in bowls on the side.

MEXICAN CASSEROLE
This recipe came from an old friend. It is simple and delicious. I like to make it for friends when we have dinner parties. Enjoy!

Steps:
- Boil 1/2 cup of water.
- Mix with stuffing.
- Spoon some salsa into bottom of baking dish, then place stuffing on top.
- Cut uncooked chicken into bite size pieces.
- Spoon 3/4 of the jar of salsa on top of the stuffing.
- Place uncooked chicken pieces on top of salsa and stuffing.
- Add remaining salsa on top of chicken.
- Spread sharp cheddar on top of casserole.
- Add optional jalanpeno peppers and/or black olives on top of cheese if desired.
- Bake at 350 degrees for about 30 minutes.
- *Please note that the stuffing will soak up the extra juices, so you can omit the 1/2 cup of water and just put the dry stuffing in the baking dish.*
- **Keep in mind, the more salsa you use, the juicier the casserole will be.
- **Top with sour cream if desired**
