Steps:

  • In a deep frying pan or casserole mix all the first 10 ingredients. Bring to a boil w/out stirring. After it boils start mixing it to get even color. When the meat is cook and liquid consistency starts to get thicker add boiled egg and mix uniformly. Salt to taste and garnish w/ green long pepperbefore removing from heat. Enjoy!

5 garlic cloves
1 tablespoon black peppercorns
bay leaf
1/2 cup atsuete oil
1/4 cup soy sauce
1 tablespoon fish sauce
1/2 cup cane vinegar
1 tablespoon muscovado sugar
1/2 cup water (or more)
salt
1 long green chili pepper
4 hard-boiled eggs (optional)

This Filipino squid recipe tastes best if you use fresh, smaller squid. Squid is simmered with onion, garlic, tomato, vinegar, and soy sauce for a tasty meal.

Adobong Pusit (Squid Adobo) image

Steps:

  • Combine the squid, vinegar, and water in a small pot over medium heat; season with salt and pepper. Cook for 10 minutes.
  • Meanwhile, heat the olive oil in a saucepan over medium heat; cook and stir the onion and garlic in the hot oil until softened, 5 to 7 minutes. Stir the tomato and soy sauce into the mixture. Pour the squid mixture into the saucepan and bring to a simmer; cook together another 20 minutes.

Steps:

  • In a shallow dish, combine the first 6 ingredients. Add chicken; refrigerate, covered, 20-30 minutes. Drain, reserving marinade. Pat chicken dry., In a large skillet, heat oil over medium-high heat; brown chicken. Stir in water and reserved marinade. Bring to a boil. Reduce heat; simmer, uncovered, until chicken is no longer pink and sauce is slightly reduced, 20-25 minutes. Discard bay leaf. If desired, serve chicken with cooking sauce.

  • Using a wide pan, heat oil and annatto powder. Stir to dilute annatto (achuete) powder. Add chicken pieces and pan sear for about 5 minutes until lightly browned.
  • Push chicken pieces to the sides of the pan and add garlic. Cook for about 30 seconds. Add onions and cook until soft for about a minute. Stir and cook for few more minutes.
  • Add cracked peppercorns, bay leaves, vinegar, soy sauce and water. Bring into a boil without stirring. Add brown sugar and give it a good stir to combine all ingredients.
  • Cover pan and reduce heat to low. Simmer for about 20 minutes while stirring occasionally. Continue to simmer for about 15 minutes until chicken is fully tender, sauce is reduced and thickened while gently stirring. Simmer longer if you want the chicken extra tender. Serve with steamed rice. Enjoy!
