African Ground Nut Stew image

Steps:

  • Saute onions until translucent in a large saucepan. Add chicken pieces and saute until golden but not necessarily cooked through. Add coconut milk and stock and bring to a simmer. Once the liquid is simmering, add the peanut butter a spoonful at a time and keep stirring until it is well incorporated. The sauce should be fairly thick (stew like, not soup like), so you may need to add more peanut butter or loosen with water depending upon the ingredients you use. Add chopped collards/greens and cook until very wilted. Season, to taste, with chili paste/sambal oelek and salt.
  • Serve over rice or other starch.
  • Traditional African stiff porridge would be served on the side and used to dip into the sauce with one's hands. Pull off a piece the size of a meatball, use your thumb to make an impression in the porridge and use the divet to scoop up the stew and pop it into your mouth! Enjoy.

1 onion, diced
2 to 3 pounds boneless chicken cut into chunks (I prefer thigh meat)
1/2 jar natural peanut butter (no sugar or stabilizers added)
1 can coconut milk (often in Asian grocery section)
2 quarts chicken stock, canned or homemade
1 large bunch collard or other greens, chopped fairly finely and after removing center ribs (frozen, drained greens can be used as a substitute)
Sambal oelek, to taste (hot chili paste from Asian grocery section)
Cooked rice, as an accompaniment

Clay Pot African Groundnut Stew image

Steps:

  • In a large, 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat.
  • Add half the beef and brown well on all sides.
  • Place the meat in a soaked 3-quart clay pot.
  • Brown remaining beef in additional 1 tablespoon oil. Add this batch to pot.
  • Add the broth to the skillet and bring to a boil, scraping up any browned bits from the bottom of the pan. Pour into a bowl and set aside.
  • Place the skillet over medium-high heat and heat the remaining oil.
  • Add the onion, bell pepper, garlic, and ginger, and saute for about 8 minutes, until the onions are translucent. Add the sauteed vegetables to the clay pot.
  • Add the peanut butter, tomatoes, thyme, cinnamon, allspice, hot-pepper flakes, and lemon juice to the reserved broth, mixing until well combined. Add this to the pot and stir to coat meat and vegetables.
  • Cover the pot and place it in a cold oven.
  • Set the oven temperature to 450 degrees F and cook for 1 hour, or until the meat is tender and the sauce thick and creamy.

  • Sauté the onions in the oil for about 10 minutes. Stir in the cayenne and garlic and sauté for a couple more minutes. Add the cabbage and sweet potatoes and sauté, covered for a few minutes. Mix in the juices, salt, ginger, cilantro, and tomatoes. Cover and simmer for about 15 minutes, until the sweet potatoes are tender. Add the okra and simmer for 5 minutes more. Stir in the peanut butter, place the pan on a heat diffuser, and simmer gently until ready to serve. Add more juice or water if the stew is too thick.

Steps:

  • Heat the oil in a large Dutch oven until hot. Sprinkle the chicken pieces with salt and pepper and cook until browned on all sides, about 20 minutes. Remove the chicken to a plate. Add the onion, garlic, ginger and bouillon cubes to the pot and cook until the onions are translucent, about 5 minutes.
  • Stir in the tomato sauce, tomato paste and peanut butter. Add 4 cups of water and the Scotch bonnet pepper. Return the chicken to the pot. Bring to a boil; reduce the heat and let simmer 10 to 12 minutes.
  • Add the sweet potatoes, tomatoes and collard greens. Cover and simmer until the potatoes are easily pierced with a fork, about 25 minutes. (Remove the Scotch bonnet pepper if someone has a low tolerance for heat.)
  • Serve warm with hot cooked rice, if using.

  • Heat oil in a large saucepan over medium-high until shimmering. Add onion, garlic, ginger, and pepper flakes; season with salt and pepper. Cook, stirring occasionally, until golden in places, about 5 minutes. Stir in tomato paste; cook 1 minute more.
  • Add collard greens, sweet potato, peanut butter, and broth. Bring to a boil, stirring until peanut butter dissolves into broth. Steps:

  • cut beef into 1 inch cubes
  • heat butter in pan add onions, carrots, garlic and fry until pale gold
  • add beef cubes and fry until well-sealed and brown
  • stir in tomato paste, cloves, ginger, cayenne pepper, salt and vinegar
  • pour in stock then bring to boil
  • cover and leave for 2hrs until meat is tender, stirring from time to time
  • Mix peanut butter with the flour
  • add a little a at time to the simmering stew until it thickens.
  • I often make loads more than this as it freezes well, just double up the quantities. I make it in a slow cooker and dont do from item 7 until it is about to be served or about to be frozen. It needs to be simmering well to thicken with the flour. I always find it best to remove quite a bit of the stock and mix it with the peanut butter mix first then mix it with the rest of the mixture as it goes very lumpy if you just add it and stir and if the beef is too tender it will just get lost in the stock

VEGETARIAN GROUNDNUT STEW

  • Combine peanut butter and 1/4 cup water.
  • Saute onion and green pepper in a little oil until soft, about 5 minutes.

Steps:

  • Preheat oven to 375 degrees. Combine cauliflower, 2 tablespoons oil and 1 teaspoon salt and toss. Spread on parchment-covered baking sheet and roast until the cauliflower begins to brown, about 25 minutes, turning pieces every 10 minutes. Set aside to cool.
  • Heat remaining oil in a 4-quart saucepan over medium heat and sauté the onion until translucent, about 5 minutes. Add the garlic, ginger and pepper flakes and sauté for 5 minutes. Add the yucca, tomatoes, carrots, celery and soy sauce, and cook, uncovered, until tomatoes are reduced, about 5 minutes, stirring occasionally. Stir in two cups of water, cover and bring to a boil over medium heat. Reduce heat and simmer partly covered for 10 minutes. Add the squash, sweet potato and 1 teaspoon salt and mix. Cover and cook for 15 minutes.
