Steps:
- Heat oven to 375 degrees F. Sift together the flour, salt, and baking soda in a mixing bowl. Combine the egg, milk, and vanilla and bring to room temperature in another bowl.
- Cream the butter in the mixer's work bowl, starting on low speed to soften the butter. Add the sugars. Increase the speed, and cream the mixture until light and fluffy. Reduce the speed and add the egg mixture slowly. Increase the speed and mix until well combined.
- Slowly add the flour mixture, scraping the sides of the bowl until thoroughly combined. Stir in the chocolate chips. Scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 13 to 15 minutes, checking the cookies after 5 minutes. Rotate the baking sheet for more even browning.
- Remove the cookies from the pans immediately. Once cooled, store in an airtight container.
BROWN SUGAR-ANISE COOKIES
This big, irresistible cookie takes almost no time to make, and is great for those occasions when you want a delicious treat, fast. If you think you don't like anise seeds, you might enjoy their fragrant notes in this recipe, but you can always use sesame seeds instead. Or leave them out altogether - these cookies are still good with just sugar (use turbinado if you don't have sanding or sparkling sugar). You can keep the rolled-out dough in the freezer, and throw it in the oven for a dinner party. With a little sorbet or ice cream, you have a dessert ready for company.

Steps:
- Heat oven to 350 degrees. Combine 2 cups flour, the cornstarch and salt in a medium bowl, and whisk to combine. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and light brown sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Add vanilla paste and beat on medium speed until well combined, scraping bowl as needed.
- Add the flour mixture and beat on low speed just until combined. Scrape the bowl and fold a few times to make sure everything is well combined. Divide dough in two, wrap each piece in plastic wrap, and flatten into disks. Chill until firm, at least 1 hour and up to 3 days.
- Place one piece of dough on a lightly floured sheet of parchment, or a silicone baking mat, and flour both sides of the dough and the rolling pin. Roll dough into an oblong oval that is roughly 7-by-10 inches and a generous 1/4-inch thick. Prick all over with a floured fork. Repeat with the second piece of dough. Slide rolled dough on parchment paper onto a baking sheet, and freeze until firm, about 10 minutes.
- Lightly beat the egg white with 1 teaspoon water to thin it out. Lightly brush the top of the dough with the egg white, and sprinkle with the anise seeds, pressing gently to adhere. Sprinkle with the sanding sugar, then bake until turning deeply golden at the edges, 15 to 17 minutes.
- Let cool on the baking sheet. After about 5 minutes, use a knife, pastry wheel or pizza cutter to cut crosswise into 3/4-inch strips. Alternatively, let cool and serve whole, allowing guests to break into pieces. Cookies will keep in an airtight container at room temperature for 1 week.
AGNES' SUGAR COOKIES (THIN & CRISPY)
I found this recipe in Yankee magazine in an article they used to feature called "Recipe with a History." This is my adaptation. Prep time includes chilling time, as well as time to roll out and cut the dough. Bake time is 12-15 per baking sheet.

CIRCUS ANIMAL SUGAR COOKIES
I got the inspiration for this cookie from a bakery in Santa Monica, California, called Cookie Good. The first time I tried it, it was like I was being transported back to my childhood when I would eat Mother's Circus Animal Cookies by the handful. After not being able to visit the bakery anymore, I decided to recreate it at home. My take utilizes a basic sugar cookie dough that is studded with rainbow sprinkles, then topped with a frosted circus animal cookie while still warm to allow it to melt into the sugar cookie and prevent it from falling off.

Steps:
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter, shortening and sugar for 3 minutes or until light and fluffy. Add in the egg and vanilla and stir until well combined. In a medium bowl, sift together the flour, baking powder, baking soda and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Fold in the sprinkles, cover with plastic wrap and chill for 30 minutes.
- Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
- Using a small cookie scoop (about 1 1/2 tablespoons), portion out the dough into balls and roll between the palms of your hands, placing 6 on each of the prepared baking sheets. Make sure to leave about 2 to 3 inches of space in between to allow the cookies to spread while baking.
- Bake for 10 to 12 minutes or until lightly golden brown around the edges. Remove from the oven and immediately place 1 frosted circus animal cookie on the center of each cookie, pressing down slightly. Allow the cookies to cool for 5 minutes on the baking sheets before transferring them to a wire rack to cool completely. Allow the baking sheets to cool completely, then repeat with the remaining dough and circus animal cookies. The cookies can be stored in an airtight container at room temperature for up to 3 days.
ANISE SUGAR COOKIES
As much as I love giving away my baking, a few goodies-like these anise Christmas cookies-are keepers. The light flavor and melt-in-your-mouth texture make them one of my favorite anise recipes. -P Marchesi, Rocky Point, Long Island, New York
