ALMOND AND PARMESAN CRUSTED TILAPIA

Flavorful recipe for this farm-raised fish that is easy and done in minutes! The fish is broiled with a creamy cheese coating for an impressive flavor and texture. Be careful not to overcook the fish.

Almond and Parmesan Crusted Tilapia image

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
  • Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
  • Mix Parmesan cheese, garlic, buttery spread, almonds, mayonnaise, bread crumbs, lemon juice, seafood seasoning, basil, black pepper, onion powder, and celery salt together in a bowl.
  • Arrange tilapia fillets in a single layer on the prepared pan; cover pan with aluminum foil.
  • Broil in the preheated oven for 2 to 3 minutes. Flip fillets, cover pan with aluminum foil, and broil for 2 to 3 more minutes. Remove aluminum foil and cover fillets with Parmesan cheese mixture. Broil in the oven until fish flakes easily with a fork and topping is browned, about 2 more minutes.

Steps:

  • Preheat oven to 400°. Whisk together egg and hot sauce in a shallow bowl. In a separate shallow bowl, toss almonds, bread crumbs, lemon zest and seasonings., Halve fillets lengthwise; sprinkle with salt and pepper. Dip in egg mixture, then in almond mixture, patting to adhere; place on a greased or parchment-lined baking sheet. Bake until lightly browned and fish just begins to flake easily with a fork, 12-15 minutes.

Steps:

  • 1. In a shallow dish beat egg and add spices, then set aside.
  • 2. In a second shallow dish, mix finely chopped almonds with Parmesan cheese and set aside.
  • 3. Lightly dust each fillet with flour on both sides.
  • 4. Melt butter in a non-stick skillet over medium-high heat.
  • 5. Dip floured fillets into egg mixture.
  • 6. Then dip into almonds and cheese mixture. Press down to collect as much coating as possible on both sides of each piece.
  • 7. When skillet is hot, saute the fillets turning only once till golden brown (approximately 2-1/2 minutes per side).
  • 8. Serve with lemon wedge garnish.

2 tilapia fillets
1 egg
1/4 tsp garlic powder
1/4 tsp lemon pepper
1/4 tsp parsley flakes
1 Tbsp flour
1/4 c grated Parmesan cheese
1/4 c almonds, finely chopped

Steps:

  • Preheat the oven the 350 - 375°F.
  • First, melt one stick of butter and place in a shallow dish good for drenching. Mix together 1 cup of smashed almonds and breadcrumbs in another shallow dish good for coating,.
  • Next dip tilapia in butter then going the the bread crumb mixture and then place in a baking dish or casserole dish.
  • Last tuck the 4 tablespoon of butter all around the fish, Do the same thing with the garlic. Sprinkle the juice of one lemon all over the fish. Lastly place and or tuck the thyme and basil all around the fish.
  • Place fish in the oven until the fish is cooked ALL the way though. Fish is not something to cook a long time so keep your eye on it.

This "Healthy in a Hurry" recipe came from Good Housekeeping magazine, September 2008. "Appealingly mild and lean, tilapia still has plenty of heart-healthy omega-3 fats. (Bonus: It is one of the least mercury-laden fish, and is also low in sodium.) Green beans and mushrooms deliver fiber and potassium, while crunchy almonds boast antioxidants." I'd probably skip the oil and take my fats from extra almonds.

Steps:

  • Preheat oven to 425 degrees. From 1 lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice; cut second lemon into wedges. In cup, mix lemon peel and 1 tablespoon juice, 1 tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper.
  • Spray 13" by 9" glass baking dish with nonstick spray; place tilapia, dark side down, in dish. Drizzle tilapia with lemon mixture; top with almonds, pressing them on. Bake 15 minutes or until tilapia turns opaque.
  • Meanwhile, in 12-inch skillet, heat remaining 1 tablespoon oil on medium-high 1 minute. Add onion and cook 5 to 6 minutes or until golden, stirring occasionally. Stir in green beans, mushrooms, water, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. Cook about 6 minutes or until most of liquid evaporates and green beans are tender-crisp. Toss with remaining 2 tablespoons lemon juice. Serve bean mixture and lemon wedges with tilapia.
