- Drain a cooked potato and mash with a fork in large bowl.
- Work in powdered sugar, add coconut and extract.
- be sure to mix well.
- Roll in balls or logs and chill.
- Dip in melted chocolate.
- If it becomes sticky while rolling in balls just chill again.

Steps:
- In a food processor mix the first 5 ingredients.
- Chill.
- Over medium heat reduce the coconut milk stirring often until reduce to a 1/4 left. It`ll take about 30 minutes. It will separate. Remove 1 tablespoon of the oil and use as you wish. (body lotion, add to your coffee -- ).
- Add chips to the coconut off heat and mix till melted.
- Roll coconut mixture into 30 balls.
- Chill.
- Dip balls into melted chocolate. You will have leftover dip.
- Top with toasted almond.

A simple cookie for when you are in the mood for chocolate and coconut but want something fresher than a candy bar that may have been sitting on the store shelves for three months, these are made with one of Californias favorite nuts, the Almond.

- Preheat oven to 350 degrees F.
- Line a baking sheet with parchment paper that has been lightly greased.
- In the microwave, melt the chocolate with the sweetened condensed milk, stirring after every minute of cook time. Microwave cook times vary; you know your oven better than I do, so no specific cook times; just until melted and smooth.
- Pour the chocolate mixture over the coconut in a large bowl. Stir in the vanilla. Mix well until the coconut is completely coated.
- Drop dough by teaspoonfuls onto the prepared baking sheet. Top each cookie with an almond, pressing down slightly.
- Bake at 350 degrees for ten to twelve minutes. Check at about 8 minutes though as the bottoms tend to burn easily. Double panning is a good idea if they still seem doughy but bottoms are done.
- Let cool on pan for one minute, then transfer to cooling rack and cool completely.

ALMOND JOY BARS
These are so Yummy! They really do taste like an Almond joy candy bar. I usually make these for Christmas, but I tend to also make them for pot lucks or other family functions. These are a huge hit. Trust me, you will Love them!

Steps:
- Melt margarine,stir in sugar and graham crackers until all worked in together.
- Pat in the bottom of a 9x13 pan.
- Bake in a 350 degree oven for 10 minutes.
- while the crust is baking, mix the sweetened condensed milk with the coconut until all the coconut is incorporated with the sweetened condensed milk.
- I usually chop the almonds up as the bars cut easier when they are chopped rather than left whole, but that is a personal choice.
- When the crust is out of the oven, spread filling over the crust. Once the filling is spread, sprinkle the toasted almonds over the filling.
- Bake the bars for 20 minutes or until light golden brown.
- Once you take the bars out of the oven, I turn my oven off, sprinkle the chocolate chips over the bars and return to oven for a few minutes until the chips are melted enough to spread with a knife.
- I have found over the years that scoring the bars while the chocolate is still soft, helps when cutting the bars after they have cooled. Other wise when you cut the cooled bars, they don't seem to cut cleanly and neatly. I also cut them into tiny bite size pieces, they are very rich and by cutting them small, they go alot further.

ALMOND JOY CANDIES
This is a very simple recipe that tastes so good you'll want to hide them! I have made candy to sell at Christmas time off and on for the past 12 years and these are a must have! This is a very small batch and I am guessing the # you'll get because you can make them like a snack size almond joy or a half bar with 2 almonds, so the size is as you wish. I have made this times 4 the amount with out any problem . They keep very well in an airtight container in a cool place for 1 month.

- Toast the almonds in the oven at 400°F just till they are warm and you can start to smell them (3-5 min); set aside.
- Bring the Karo to a boil and add the coconut, remove from heat and add extract.
- Place in fridge till firm.
- Form into 12 round balls or 6 ovals and place on waxed paper -- press 1 almond to each ball or 2 to each oval and chill for 1/2 hour. (You can play with the size of these, if you like more filling to less chocolate, make them bigger, you'll just get fewer).
- Melt the chocolate in a double boiler or in a microwave being careful to stir often and not cook--just melt.
- Dip each candy into the chocolate; coat evenly and completely. No coconut should be exposed! Place on a wax paper lined cookie sheet in the fridge till chocolate is set.
- Store in a airtight container.

- In a large bowl, mix shredded coconut, condensed milk, and vanilla. The mixture will be sticky but pliable for you to shape.
- In a double broiler (a bowl over a pan filled with water), melt the chocolate. If you choose to use the microwave to melt your chocolate, it will take 1-2 minutes but make sure you stir every 15-30 seconds so the chocolate doesn’t burn.
- Line a mini cupcake pan with liners (I find it easier this way so they hold up). Add a teaspoon or so of melted chocolate into the bottom of each cup – enough to fill the bottom. Top with a teaspoon of coconut mixture and press down lightly using your spoon. Top the coconut with an almond, press down to sink into the coconut slightly, and top with more melted chocolate (enough to cover).
