ALMOND WINE COOKIES
The wine is not over powering it's just right. I found this in a cookbook years ago can't remember which but love them.

Steps:
- Preheat oven to 375.
- With electric mixer cream butter and sugar until light. Add egg yolks and anise extract. Mix until blended.
- On low, add flour and wine alternately and mix well. Mix in chopped almonds to form a soft dough.
- Using a teaspoon, drop dough into slivered almonds and roll to coat.
- Place on a cookie sheet, leaving 2 inch space between. Press slightly to flatten cookies.
- Bake for 12-15 minutes or until lightly browned.
- Remove from oven and place cookies on rack to cool.
- Store in air tight container.

- Preheat oven to 350 degrees F.
- In a large bowl, cream butter and sugar together until fluffy. Beat in the egg, vanilla, and almond extract. Sift the flour over the top, add the salt and the chopped almonds and fold to combine.
- Pull off little pieces of the dough and roll them into balls about 1-inch in diameter, enclosing a whole almond in the center of each one. Place on an ungreased baking sheet and bake on the center rack of the oven for 15 to 20 minutes, until light brown. Transfer to racks to cool slightly. When cool enough to handle, roll 1/2 the cookies in the cocoa powder, and the remaining 1/2 in the confectioners' sugar. Serve warm or return to the rack to cool.

- Preheat oven to 400 degrees F (200 degrees C).
- In large bowl, cream together the butter and sugar. Beat in the egg, amaretto, and almonds. Gradually mix in the flour until well blended. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets.
- Bake 5 to 8 minutes in the preheated oven, or until cookies are lightly colored.

- Preheat the oven to 350° and line a large rimmed baking sheet with parchment paper. In a large bowl, using a hand mixer, beat the butter with the granulated sugar and salt at medium speed until light and fluffy, 3 minutes. Beat in both extracts. Reduce the speed to low and add both flours, mixing until just combined. Refrigerate the dough until firm, about 30 minutes.
- Scoop 12 rounded tablespoonfuls of the dough onto the prepared baking sheet. Using your hands, roll each ball into a 4-inch rope, then shape into a crescent; return to the baking sheet. If the dough gets too soft, refrigerate until firm. Bake the cookies, rotating the sheet halfway through baking, until lightly browned around the edges, 13 to 15 minutes. Transfer to a wire rack and let cool for 5 minutes.
- Sift the 1 1/2 cups of confectioners’ sugar into a shallow bowl. Dredge the warm cookies in the confectioners’ sugar; return to the rack and let cool completely. Repeat the baking and dredging with the remaining dough. Dust the cookies with additional confectioners’ sugar before serving.
