APPLE PIE IN A JAR
This is from the Rinn UMC cookbook from a dear lady my family knew well. She was a good scandinavian who loved to cook and feed people. I love this recipe and have a few jars in my pantry all the time. Great for last minute desserts!

Steps:
- Peel and slice apples.
- Fill quart jars with apples leaving 1 inch head space.
- Be sure to pack the apples in there, put a few in and smosh down with the handle of a wooden spoon, then a few more and repeat.
- Make syrup by combining sugar, cornstarch, cinnamon, nutmeg, and water.
- Cook until thick.
- Add lemon juice.
- Pour syrup over apples in jar, leaving 1/2 inch headspace.
- Be sure to run your plastic spatula around the inside of the jar to get the air bubbles out.
- Place the lids on and screw the rings down just finger tight.
- Process 20 minutes in hot water bath.

APPLE PIE IN A JAR
This is great to do when apples are abundant and can be used on waffles and ice cream too.

Steps:
- Place a rack in the bottom of a large stock pot. Fill pot with hot water. Sterilize 7 1-quart canning jars, 7 lids, and 7 rings by placing on rack, jars upright. Bring water to a boil. Boil 10 minutes. Remove with a holder and allow jars to air-dry. Save water for processing apples.
- Combine sugar, cornstarch, cinnamon, nutmeg, salt, and water in a large saucepan. Place over high heat and cook until thick and bubbly, stirring frequently. Remove from heat and stir in lemon juice.
- Tightly pack apples into sterilized jars. Slowly pour syrup over apples, covering them completely. Gently tap jars on countertop to allow air bubbles to rise. Screw lids on jars.
- Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
- Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Sealed jars can be stored for up to a year.

PIE-IN-A-JAR

Steps:
- Make the preferred pie crust recipe.
- Roll out the dough on a floured surface. Using the ring from the jar lid, cut 8 circles from the dough, the circles will be the tops of your pies. Line each 1/2-pint glass, oven-safe jar with the remaining dough. Working with the dough as little as possible, make sure that the dough is pressed tightly against the entire surface area of the jar with the exception of 1/2-inch at the top.
- Once each jar is lined with pie dough, fill with 1/2 cup preferred pie filling.
- Top each pie with the pie dough circles or create a lattice pattern or crumb topping to go on top. Make sure you vent the top of the crust by creating a slit so that steam can escape. Using your fingers, or a fork, press the 2 pieces of dough together.
- Brush each pie crust with melted butter and sprinkle with sugar. Seal each jar with metal lid and place in the freezer for up to 3 weeks.
- If baking pies fresh, preheat the oven to 400 degrees F. Bake 40 to 45 minutes, or until the crust is golden brown and the filling is bubbly. If baking pies that have been frozen, bring them to room temperature before placing in the oven
APPLE PIE (FILLING) IN A JAR
My children's school used this recipe as a fundraiser at Thanksgiving. It went over really well! The recipe is from a friend's 4H cookbook. I used it to make apple crisp. Easy and yummy! Can be doubled.

- In a large saucepan, combine sugar (IF THE APPLES ARE QUITE SWEET, USE ONLY THE 4 CUPS OF SUGAR), cornstarch, cinnamon, nutmeg and salt with *5 cups* of water.
- Mix well over low heat until all is dissolved.
- Slowly add the remaining water.
- Cook stirring often until mixture is thick and bubbly.
- Add lemon juice.
- Peel and cut fresh apples into small wedges and fill quart jars.
- Pour prepared sugar mixture over the apples and seal.
- Boil 20 minutes in a hot water bath.

- In a large bowl, toss apples with lemon juice and set aside. Pour water into a Dutch oven over medium heat. Combine sugar, cornstarch, cinnamon, salt, and nutmeg in a bowl; add to water, stir well, and bring to a boil. Boil for 2 minutes, stirring constantly.
- Add apples and return to a boil. Reduce heat, cover and simmer until apples are tender, about 6 to 8 minutes. Cool for 30 minutes.
- Ladle into 5 freezer containers, leaving 1/2 inch headspace. Cool at room temperature no longer than 1 1/2 hours.
- Seal and freeze. Can be stored for up to 12 months.

QUICK APPLE PIE FILLING RECIPE
A homemade filling that tastes much better than store bought. I use the recipe with apples grown by friends or try using a tart apple such as Granny Smith.

- Let stand until juice begins to release.
- Stir as you bring it to a boil over medium-high heat.
- Boil hard for 1 minute.
- Mix in tapioca, cinnamon and lemon juice.
- Boil hard for 1 minute more.
- Pack into hot sterilized quart jar to within 1/2 inch from top.
- Place sterilized metal lid on the jar and screw metal band on securely.
- Process in boiling water bath for 20 minutes.
- Repeat for as many jars as you like.

- Combine apples and sugar in a large saucepan. Mix together, then let stand until juice starts to be released from apples. Place over medium-high heat and stir frequently until mixture comes to a boil. Boil hard 1 minute, continuing to stir frequently.
- Mix tapioca, cinnamon, and lemon juice into apples. Boil hard for 1 minute more, continuing to stir. Pack mixture into a sterilized quart jar, a spoonful at a time, ensuring that there are no air bubbles in mixture. Secure sterilized lid.

- Note: To keep apples from turning brown, put in large container of cold water and add lemon juice or if juice is not available, 7UP will work just as well.
- Blend all dry ingredients, mix well.
- Add water and cook until thick then add lemon juice and food coloring.
- Pack apples in quart jars and pour cooked filling over the apples.
- Put lids and rings on quart jars and put in boiling water bath for 20 minutes.
- After 20 minutes, take each jar out carefully and put on towel, use pot holders to tighten rings on each jar and let stand until cool.
- Mark date on outside of jar and store for future use.
- Enjoy.

- Bring sugar and 6 cups water to a boil in a large kettle.
- Mix Clear Jell with cold water and slowly add to sugar mixture as it's boiling.
- Stir and boil until thick and clear.
- Remove from heat and add cinnamon.
- Pour over apples and mix well.
- Fill clean quart jars.
- Leave at least 1 inch space in top of jars or they will run over.
- Put lids on and process 35 minutes in boiling water.
- Or in pressure canner for 13 minutes with 5 pounds pressure.
