CRUMBLY SWEET PASTRY (PATE SABLEE) WITH ALMONDS

Crumbly Sweet Pastry (Pate Sablee) with Almonds image

Steps:

  • In an electric mixer, cream together butter and sugar until light and fluffy. Add egg and salt and beat until combined. Stir together flour and almonds and add to butter mixture. Slowly mix just until flour is evenly moistened. Do not let it form a ball. Remove dough from bowl onto a lightly floured work surface and form into 2 balls. Flatten each ball into a disk, wrap well, and refrigerate a minimum of four hours or as long as 4 days.
  • These two different pastry doughs have very different textures. The first is flaky due to the incorporation of butter in small pieces: as the dough cooks, the butter melts and the water in it turns to steam and puffs up the dough. The second dough is tender and crumbly: the butter is well creamed as for a cookie; the confectioner's sugar adds tenderness due to the cornstarch it contains; the ground almonds, which can be substituted for some of the flour in any pastry dough recipe, add an interesting graininess.

Steps:

  • Preheat oven to 350.
  • Unroll 1 package of crescent rolls across the bottom of a 9x13 pan.
  • (4 rectangles fit across the short way.) Press or stretch lightly to fit, and pinch perforations together to seal.
  • Mix cream cheese, egg yolk, almond extract and sugar.
  • Spread over 1st layer.
  • Unroll 2nd package of crescent rolls and stretch to fit over the top.
  • Slightly beat egg white and brush on top layer of crescent rolls.
  • Sprinkle with additional sugar, then sliced almonds.
  • Bake 20-25 minutes, till golden brown.
  • Cool completely before cutting.

2 packages refrigerated crescent dinner rolls
8 ounces cream cheese
1 egg, separated
2/3 cup sugar, plus more for sprinkling
2 teaspoons almond extract (don't use imitation)
1 (2 ounce) package sliced almonds

  • In a large bowl, combine 1 cup flour and salt; cut in 1/2 cup butter until mixture resembles coarse crumbs. Add 2 tablespoons cold water; stir with a fork until blended. Shape dough into a ball; divide in half. Place dough 3 in. apart on an ungreased baking sheet; pat each into a 12x3-in. rectangle., In a large saucepan, bring remaining butter and water to a boil. Remove from the heat; stir in extract and remaining flour until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, 1 at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Spread over rectangles. Bake at 400° until topping is lightly browned, 18-20 minutes. Cool for 5 minutes before removing from pan to wire racks., For frosting, in a small bowl, combine the confectioners' sugar, butter, water and extract; beat until smooth. Spread over pastries; sprinkle with almonds.

Easy Danish Almond Pastries image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch cake pan with parchment paper.
  • Unroll 1 tube of crescent roll dough and spread in the bottom of the prepared pan. Seal the seams of the dough to prevent from separation.
  • Roll almond paste into a thin sheet, large enough to cover your cake pan. Cut edges with a knife or rolling pizza cutter.
  • Combine mascarpone cheese, 1/2 cup white sugar, and egg yolk in the bowl of an electric mixer; mix until thoroughly combined and smooth with no lumps remaining. Spread evenly on top of dough. Place rolled out almond paste on top of cheese mixture.
  • Open the remaining tube of crescent dough, unroll it, and put on top of the almond paste. Seal all of the seams and ensure dough covers the entire top of the pan. Whisk egg white and use a pastry brush to spread on the top of the rolled out dough. Spread sliced almonds on top to coat. Lightly sprinkle remaining white sugar evenly on top.
  • Bake in the preheated oven until top is golden brown, 25 to 30 minutes. Remove from the oven and allow to cool.
  • Meanwhile, mix powdered sugar and water for glaze together in a bowl. Drizzle over the top of the cooled Danish and cut.

Warm Apple-Almond Pastry image

Steps:

  • Preheat oven to 400 degrees F.
  • Thaw pastry sheets at room temperature about 1 hour before using it, or microwave it at 20% power for 3-4 mintues, thawed but still cold for easier handling.
  • Grate 3/4 cup of the almonds.
  • Make the almond mixture by combing, in a bowl, the grated almonds, sugar, flour, whole egg and the 1 egg yolk, and almond extract. Mix well and set aside.
  • Prepare the apples by cutting them in half lengthwise, and removing the stems, and seeds, then slice the apple halves crosswise, to 1/4" thick. Set aside.
  • Unfold one pastry sheet onto a baking pan large enough to accomodate the rolled out pastry, (a pizza pan might be best,) spreading out to 10 1/2" square.
  • Spreak the almond mixture evenly over the pasty to within 1" of the edge.
  • Arrange apple slices, creating them into an overlapping pattern, over the filling.
  • Cut remaining pasty sheet into 9 - 1" strips.
  • Moisten outer edges of spread dough with water. Arrange five strips diagonally over apples, twisting the strips, then press edges into moisted dough to seal.
  • Trim excess.
  • Arrange the fmaining dough strips around the edge of pasty, to creat a nice even border.
  • Bake for 30 - 35 minutes, pastry should be golden brown. Cool for 10 minutes.
  • Spread the warmed jam over the pastry. Brown the remaining almonds in microwave, by cooking them on high for 5 - 7 minutes. Stirr every 30 seconds. Chop the almonds.
  • Sprinkle the almonds over the pastry. Then sprinkle with powdered sugar, if you want to. Cut it into squares, then top with ice cream and/or whipped topping. Serve it warm.

ORANGE BLOSSOM ALMOND PASTRIES

Posted for ZWT II - Africa/Middle East, from Bon Appetit's "Tastes of the World". Because of the crecent shape, these tender, filled pastries are called "gazelle horns" in Morocco. They have an almond paste center and are lightly scented with orange blossom water, an ingredient often used in Middle Eastern Cooking. Orange Blossom Water can be purchased at most liquor Stores or in the liquor department at most supermarkets. These can be made 1 day ahead.

Orange Blossom Almond Pastries image

Steps:

  • For Pastry:.
  • Combine flour and salt in large bowl. Add butter and rub with figertips until mixture resembles coarse meal. Add enough ice water by tablespoonfuls just to bind dough, tossing mixture with fork. Divide dough into 2 pieces. Lightly dust dough with flour and flatten each piece into rectangle. Wrap in plastic and refrigerate at least 1 hour.
  • Filling:.
  • Finely grind almonds in processor. Add almond paste, butter, 2 tablespoons sugar, egg and 1 tablespoon orange blossom water. Process until smooth. Transfer to small bowl and refrigerate 1 hour.
  • Position rack in center of oven and preheat to 400°F Roll out pastry rectangle on lightly floured surface to 13x15 inch rectangle. Trim to 12 inch square. Cut into sixteen 3 inch squares. Place 1 teaspoon filling 1/2 inch from 1 corner to 1 pastry square. Beginning at same corner, roll corner of dough tightly over filling and continue rolling as for jellyroll. Pinch ends firmly to seal in filling. Gently shape into crecent. Place crescent on large baking sheet. Repeat with remaining dough squares and filling. Roll, cut, fill and shape remaining pastry rectangle. Bake until golden brown, about 20 minutes. Cool slightly.
  • While pastries are still warm, brush lightly with remaining 2 tablespoons orange blossom water. Turn pastries 1 at a time in powdered sugar to coat. Transfer to rack and cool completely.
  • Store in airtight container at room temperature.
