- Heat the oil in a wok over medium heat. Stir in the onions, ginger garlic paste, and bay leaf. Cook until the onions are tender. Mix in the potatoes and peas. Cover and cook until the potatoes are tender, about 15 minutes. Remove the bay leaf.
- Stir the tomato puree, garam masala, paprika, sugar, and salt into the vegetable mixture. Continue cooking about 10 minutes. Mix in the cilantro and continue cooking about 2 minutes.

- Firstly, wash potatoes and place them in a pressure cooker. Pour water and boil the potatoes. On the other hand, place tomatoes and onions over a chopping board and chop them. Once the potatoes are boiled, peel them and cut them into cubes.
- Next, place a frying pan over medium flame and pour oil in it. Once the oil is heated, add chopped onions into the pan. Fry them until light brown in colour. Add the peas and cook on low flame till they soften. You may also cover the pan for a while.
- Now add salt, cayenne pepper, turmeric and cumin powder and mix them well. Then, add potato cubes and cook the mixture for 10-15 minutes.
- While stirring the mixture occasionally, add chopped tomatoes into the pan and cover the pan with a lid. Cook the mixture for 10-12 minutes more. Garnish with coriander leaves or the toppings of your choice and serve. It tastes great with steamed rice.
