Steps:
- Preheat oven to 350 degrees for the quiche.
- In a bowl, beat eggs with a whisk; add the cream and beat again; add the grated onion and beat yet again.
- Sprinkle bacon in the bottom of the shell; sprinkle parmesan over the top of that.
- Pour cream mixture over all.
- Dot the top with small bits of butter.
- Place the pan on a cookie sheet or other drip pan and into a preheated oven.
- Bake at 350 degrees until domed and light brown.
- Cool 1/2 hour before cutting and serving.
TARTE FLAMBEE (ALSATIAN BACON & ONION TART)
While this is a pizza almost everywhere else, in certain places on the German/French border, it goes by the totally dessert-sounding name of tarte flambée. Here we're using bacon, onions, and a creamy cheese mixture as toppings.

Steps:
- Place bacon in a skillet and cook over medium-high heat until cooked but not crisp and fat has rendered out, about 8 minutes. Drain in a strainer; reserve the fat.
- Place skillet back over medium heat. Add sliced onions. Cook briefly just until they lose their raw edge and soften up slightly, 3 to 5 minutes. Add a teaspoon or 2 of bacon fat if pan seems too dry. Remove skillet from heat and allow to cool to room temperature.
- Mix fromage blanc, creme fraiche, nutmeg, salt, black pepper, and cayenne pepper together in a mixing bowl.
- Place 1 ball of pizza dough on a well-floured surface. Flatten and roll out to a 10- or 12-inch thin circle. Transfer to a cold cast iron pan. Heat over medium-high heat to pre-cook the bottom of the crust. As dough heats and bubbles appear, deflate them with the tines of a fork so crust ends up thin and crisp (not chewy). When bottom is nicely browned and just about to start getting charred, 5 to 7 minutes, remove from heat. Repeat with remaining dough.
- Spread a generous amount of cheese mixture over the crust. Top evenly with some onions and then the bacon. Broil 5 or 6 minutes until edges are browned and starting to lift. Repeat for remaining tartes.

This recipe is a close cousin of the famous Quiche Lorraine. The main difference is that deliciously sweet, sautéed onions replace the bacon and cheese.

- Fit pastry into a deep-dish pie pan. (1 recipe pate brisee #rz.170934).
- Sauté the onions in the butter over medium heat for about 10 minutes, until they turn very soft and translucent.
- Preheat the oven to 375 degrees.
- Sprinkle the onions onto the bottom layer of the pastry.
- Beat together the eggs, half and half, salt, pepper, and nutmeg.
- Pour the eggs over the onions and bake the quiche for 45-50 minutes, until the eggs are set in the middle.
- Cool slightly and serve.

- Sausages and Choucroute. You cannot come to Alsace and not have some sausages and choucroute on your bucket list of things to do. Heavily inspired by the German Rhineland next door, this dish is a classic in Alsace.
- Tartiflette. If you like cheese and potatoes, there is nothing not to like about a tartiflette. This hearty meal has copious amounts of reblochon cheese and bacon lardons topped onto sliced potatoes.
- Flammekueche (tarte flambée) Flammekueche, flammkuchen, or tarte flambée, this is a dish that epitomizes Alsace’s past, present, and future. While it may be called different names, it is a dish that is much loved by the locals.
- Reisling, Savoie, and Alsatian wines. Given the history of the Alsace region, wines from this area started off being heavily influenced by their next-door neighbor German wines.
- Bretzel. French people don’t normally recommend snacking, but if you come to this part of France, don’t forget to snack on a pretzel (in French it is pronounced as bretzel).
- Kugelhopf. If you are looking for a dessert in Alsace, try the Kugelhopf cake (Gugelhupf in German). In Alsace, it is a traditional cake with raisins made in bundt mold (compared to other versions with cocoa, lemon, etc).
- Quiche Lorraine. The classic quiche dish comes from the old department of Lorraine in France, on the edge of the French-German border. These days the department of Lorraine is part the Alsace region, and the traditional quiche lorraine is an Alsatian dish that is much loved.
- Beer. Given its German heritage, it is no surprise that Alsace is the main beer-producing region in France. There are many breweries and microbreweries based in the region, and even an Oktoberfest celebrated every year.
- Baba au rhum. The Baba au Rhum is said to be invented by the same guy who invented French onion soup. Ex-Polish King Stanislas (whose daughter Marie happened to be married to French King Louis XV) was in exile in the Alsace-Lorraine region, when he decided to take their traditional gugelhupf cake and douse it in liquor.
- Eau de Vie. Eau de Vie literally translates to “water of life” and is not just one, but a class of digestifs. At about 40-45% alcohol content, it has a light fruit flavor.
