ALSATIAN PORK AND SAUERKRAUT
This is a French recipe, very easy and a real comfort food. An all in one pot meal! I have gotten people who say they don't like sauerkraut to try this dish. They couldn't believe how good it is and asked for more.

Steps:
- Place the bacon in a large, deep pot, and cook over medium-high heat, stirring to turn pieces occasionally, until evenly browned, about 10 minutes. Drain the bacon pieces on a paper towel-lined plate. With a paper towel, wipe the bacon grease out of the pot but keep as much of the brown bits as possible. Stir in the onion, sauerkraut, brown sugar, and chicken broth, stirring to dissolve the sugar. Add the potatoes and apple slices.
- Place the juniper berries, peppercorns, cloves, parsley, and bay leaf into a small cheesecloth square, and tie the ends together to make a spice bag (or place the spices into a stainless steel tea ball). Place the spice bag into the pot, and add the pork chops and kielbasa sausage pieces. Add more chicken broth, if needed, to just cover the ingredients. Bring the pot to a boil, reduce heat, and simmer until the potatoes are very tender, about 1 hour.
- To serve, use a slotted spoon to remove the sauerkraut, potatoes, and apple slices to the center of a serving platter. Arrange bacon, pork chops, and kielbasa pieces around the outside of the platter.

PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

- Preheat oven to 400.
- Using 2 t. oil, brown the pork chops until beginning to brown, about 1-2 minute per side. Transfer to a plate.
- Using last teaspoons of oil, cook onion until softened (3-4 minutes). Add garlic; cook about 30 seconds more. Add juice and cook until it's nearly evaporated, 30-60 seconds. Stir in bbq sauce. Return chops to pan, turning several times to coat with sauce.
- Transfer pan to the oven and bake until done. Recipe says 145 degrees on instant read thermometer, 6-10 min, barely pink. (I don't want any pink in my chops. Bleck.) Turn them over, only once, during cooking time to produce more tender chops.

- Heat oil in a large skillet over mediumhigh. Season pork chops all over (including the fat cap) with salt and pepper. Cook pork chops until bottom side is golden brown, about 1 minute. Turn and cook on other side about 1 minute before turning again. Repeat this process, turning about every minute, until chops are deep golden brown and an instant-read thermometer inserted into the thickest part registers 135°, 8-10 minutes (cooking time will depend on thickness of chops).
- Remove pan from heat and add sage, garlic, and butter, smashing garlic into butter. Tilt skillet and spoon foaming butter and drippings over pork chops, making sure to baste the fat cap as well as the rib. Transfer pork chops to a cutting board and let rest at least 5 minutes (pork will come to 145° as it sits).
- Cut away bone and slice pork about 1/4" thick. Serve with any juices from the cutting board spooned over top.
PORK CHOP CASSAROLE

- preheat oven to 180c/ gas 5
- grill or fry chops for 5 minutes on each side just to brown
- meanwhile peel and slice the potatoes into discs, also peel and slice the onion
- arrange a 3rd of the potato in the base of a large ovenproof dish, add a layer of onion on top, then the potatoes, then onion, repeat till all used up
- open soup, spoon and spread half on top of the potato and onion mix
- when pork is just browned lay the chops on top of the potatoes and sauce. Spread rest of soup onto the pork chops
- fill soup can half way up with water and pour into cassarole dish in between the pork chops to wash some of the soup into the potato and onion layers.
- place lid on and cook in oven, middle shelf for about 1 hour. serve pork chop onto plate then spoon out the potato. accompany with your favourite veg!
CASSAROLED PORK CHOPS

- pre heat the oven to 100 degrees / gas mark 2
- peel and halve the onions, cut carrots in halve, make up the vegetable stock in a jug
- place the chops on a chopping board trim the the fat set aside for later, place the chops in a casserole dish laying the onions in the gaps as you do so,
- place the carrots the rest of the onions, chillies, tomato puree, thyme and all the stock in the casserole dish season with salt and pepper
- pop the lid on place in the middle of the oven for 5 hours.
- after 5 hours remove from the oven straine but retain all the fluid, remove all the bones and discard, put the carrots and onions back in the fluid in a large saucepan place the meat back in add 2 - table spoons of gravy granules bring to the boil then simmer for 1 hour stirring occasionaly to prevent sticking.
- place an oven dish with a little oil in to a pre heated oven at 180 degree gas mark 6, mean while peel and halve 4 potatoes and part boil, drain and leave to rest, once the oil is hot pour the potatoes into the hot oil cook for 1 hour shaking 3o mins into cooking, steam the broccoli and carrots until tender. then serve and enjoy.

- Preheat oven to 350°. In a shallow bowl, combine flour, salt and pepper. Add pork chops, 1 at a time, and turn to coat. , In a large skillet, brown pork chops in oil on both sides. - In a large glass baking dish, combine the peppercorns with the thyme and extra-virgin olive oil. Add the pork chops and turn to coat. Let stand at room temperature for at least 1 hour and for up to 4 hours or refrigerate overnight.
- Meanwhile, in a small saucepan, boil the veal stock until reduced to 1 tablespoon, about 15 minutes.
- In a saucepan, heat the pure olive oil until shimmering. Add the shallot and garlic and cook over moderate heat, stirring, until softened, about 4 minutes. Stir in the Dijon mustard and half of the whole-grain mustard. Add the brandy and cook until nearly evaporated, about 3 minutes. Add the wine; simmer until reduced by half, about 10 minutes.
