Steps:
- Preheat oven to 350°F
- Grease the smaller of the two baking dishes with butter, and put the remaining butter in the saucepan with milk sugar.
- Place over medium heat, stirring occasionally, until the butter is melted.
- Whisk eggs in mixing bowl and add hot milk slowly while whisking constantly.
- Stir in vanilla and salt.
- Place bread cubes in buttered baking dish, and sprinkle with raisins.
- Pour milk over bread cubes and stir slightly.
- Sprinkle with cinnamon if you like.
- Place the smaller baking dish in the larger one.
- Pour hot water in the larger dish until it goes 1/2 way up the smaller dish.
- Carefully set both dishes in preheated oven.
- Bake til set- about one hour.
- Serve with light cream or milk if desired.

What's better than bread pudding ? This sounds delish ! Another recipe out of my Missouri Amish cookbook 1990. I am unsure of the serving size or pan size.

- Soak torn bread in cream.
- Add sugar and butter, beaten eggs, cinnamon, salt and vanilla, stirring to blend.
- Put into a buttered baking dish.
- May add a little chopped citron, chopped raisins or dates if you wish.
- Bake approximately 40 minutes in a 375 oven.

VANILLA BRIOCHE BREAD PUDDING

- Preheat the oven to 350 degrees F. Space two racks evenly in the oven.
- Cut five 3/4-inch-thick slices of brioche and place them in one layer on a sheet pan. Trim some of the crusts from the remaining brioche and cut in 1-inch dice. Spread out on a second sheet pan. Put both pans in the oven for 5 minutes to lightly toast the bread.
- Meanwhile, for the custard, whisk together the whole eggs, yolks, half-and-half, milk, granulated sugar, vanilla and vanilla seeds in a large bowl and set aside. Line a 3-quart baking dish with the whole slices of brioche, cutting them to fit in one layer. Distribute the diced brioche on top. Pour on the custard and press lightly so all the bread is soaked with custard. Set aside for 10 minutes.
- Place the dish in a roasting pan large enough to allow the baking dish to sit flat. Pour about 1 inch of the hottest tap water into the roasting pan, being sure not to get any water into the custard. Cover the roasting pan tightly with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 45 to 50 minutes, until the custard is set and a knife inserted in the middle comes out clean. Dust with confectioners' sugar and serve warm with the melted ice cream.
AMISH CHOCOLATE PUDDING
This is my Amish grandmother's recipe and I've never tasted any chocolate pudding that compares to it.

- Combine milk, sugar, cocoa, and flour in a saucepan over medium-low heat, stirring constantly. Add egg yolks and turn heat up to medium-high, continuing to stir, until thick, about 15 minutes. Remove from heat and stir in vanilla extract. Serve warm or chilled.

- For the bread pudding: In a large bowl, whisk together the cream and eggs. Add the brown sugar, raisins, butter, cinnamon, ginger and 1 cup granulated sugar. Mix well. Gently stir the bread cubes into the egg mixture. Refrigerate for 1 hour.
- Preheat the oven to 350 degrees F and coat a 9-by-13-inch baking dish with cooking spray.
- Pour the bread mixture into the prepared baking dish. If desired, sprinkle the top with the remaining 2 tablespoons of sugar. Bake until a knife inserted into the middle comes out clean, 45 to 50 minutes.
- Meanwhile, for the bourbon sauce: Combine the confectioners' sugar, bourbon, butter, milk and cinnamon in a medium saucepan, bring to a simmer over low heat, whisking constantly until thickened and no longer watery, 2 to 3 minutes. Serve with the bread pudding warm, at room temperature or chilled.
AMISH RHUBARB PUDDING
This is an old nostalgic recipe from my grandmother..We looked forward to it every spring..I think she got it from an Amish neighbor.. This is very different, I think because of the addition of a cream sauce that can also be used on gingerbread..

- Preheat oven to 375*.
- Butter a 10x14 pan.(you definitely need one larger than 13x9 pan.it is too shallow and batter will run out into your oven.
- In a large mixer bowl, slightly beat the egg, add 1 cup of granulated sugr and combine well.
- Add the flour,b. powder, nutmeg, vanilla, salt and milk; blend. Pour the batter into the pan. Set aside.
- In another large mixing bowl, mix rhubarb, (if using frozen rhubarb, do not thaw), boiling water, remaining sugars, and the food coloring.
- Pour this over the batter, making sure the rhubarb is evenly distributed. (Admittedly, it looks like a rather questionable mess here, but believe me, it will come out all right).
- bake for 45-50 minutes or top is golden brown and bubbly and cake is done in the center, use toothpick test.
- Meanwhile prepare the cream sauce by using a small saucepan over medium-high heat, combine the sugar, flour and orange zest.Gradually add the milk, whisking till smooth. Bring the mixture to a boil, then lowe the heat to medium-low and cook for 3 minutes, whisking constantly.
- Remove the pan from heat and whisk in remaining ingredients.
- Remove the pudding from the oven and cool to lukewarm.
- It can be reheated in the microwave.
- Cut into squares and serve with the warm cream sauce.

We found this recipe tucked inside my mom's Bible when going through her things. It has become a family tradition on the first snow day of the year and if that doesn't happen, which can be the case here in central Virginia, we know it'll be the featured dessert at Easter and anytime a comfort food is in order.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
- Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
- For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. Pour sauce over warm bread pudding, or serve on the side in a bowl.

AMISH WOODFORD PUDDING
I have not tried this recipe, but it sounded good...Supposedly this is an old Kentucky recipe that is really a cake, but it has always been called a pudding..It is very moist, dark and a bit fruity..and finely grained. The sauce is supposed to be excellent.

- Preheat the oven to 325*. cream the butter and sugar for 7 minutes in a stand mixer bowl on medium.
- Add the eggs, one at a time, blending well.
- After each addition, then blend in the jam.
- Add the baking soda to the sour milk and stir, then add to the egg mixture and blend well. In small bowl,whisk together the flour, cinnamon, nutmeg and salt.
- Add the flour mixture to the egg mixture and combine until all the ingredients are just blended.
- Pour the batter into a greased 8x8" pan and bake for 45 minutes -- or the top of cake is golden brown and springs back when touched with your finger.
- Remove from the oven and cool on wire rack. Prepare the saue; in a medium saucepan, melt the butter over medium heat.
- Add the sugars and cream and bring to a boil, stirring frequently.
- Boil and stir for 1 minute. cool slightly, then stir in the vanilla and salt.
- To serve, cut the pudding into squares and serve with the hot sauce.
