PARKER'S SPLIT PEA SOUP
Is there anything more comforting than a bowl of homemade soup? Cook up a pot of Parker's Split Pea Soup by Ina Garten, Food Network's Barefoot Contessa.

- In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.
ANDERSEN'S SPLIT PEA SOUP (CROCK POT VERSION) COPYCAT
This came from the Los Angeles Times via Liz at Recipegoldmine.com. It was a stove top soup, but the closest I've yet found to Anderson's which is a tradition in California. I modified it just a bit for the crock pot and made it a hair thicker to suit our tastes. You can also add bacon, ham, or ham hocks to enhance the flavor a bit.

Steps:
- Combine water, peas, celery, carrot, onion, thyme, red pepper and bay leaf in crock pot.
- Season to taste with salt and pepper.
- Cook on low until split peas and vegetables are tender (anywhere from 6-8 hours).
- Press soup through fine sieve and reheat just to boiling point or use hand blender to smooth.

ANDERSEN'S SPLIT PEA SOUP - COPYCAT
Anderson? Yeah, I'm talking about Anderson's Pea Soup in Buellton,California off Highway 101 very close to the "Dutchtown" of Solvang. Anyone who's ever driven on a long trip up the 5 or 101 freeways in California HAS to have seen these billboard signs seemingly in the middle of nowhere proclaiming: "Try Anderson's Split Pea Soup, only 227 miles!". I don't actually have a picture of one of the signs but I plan to take one next time I drive up north. This is some marketing genius who thought of this. There is absolutely nothing to do while driving up these long stretches of highway, but look at the scenery. So they just buy up some cheap ad billboard space in 50 mile increments or so and plop their signs down advertising how far it is to their Pea Soup Headquarters. I'd like to know how successful they are in getting people to think about Pea Soup... I know it's certainly worked on me! I recently decided to make use of the extra ham and ham hock bones that are inevitably left over from Sunday dinner. I've never tried to make Split Pea Soup so I stopped by the market and picked up a few bags.

- Wash and drain the dried peas. Watch out for tiny ROCKS in the peas... the occur every so often and can break your teeth if left in! If you'd like to, cut off the ham from the bones, cube it and set aside. Some people leave it on and then cut it off after cooking, but cutting it off before will decrease the saltiness of the soup.
- Heat up the oil in a large pot, add the onion, celery, and carrot. Cook over medium heat until softened, about 3-5 minutes. Add the garlic and cook for about 1 minute more.
- Add the chicken stock, peas, ham bones, bay leaf, and bring to a boil. Cook half covered over low heat for about 1 to 1.5 hours stirring occasionally. When you get near the end of cooking, you can add the cubed ham. Add salt and pepper to taste. Delicious split pea soup is now ready!
SPLIT PEA SOUP WITH CRISPY KIELBASA
One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

- Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
- Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
- To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
- Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.
SNERT (SPLIT PEA SOUP)
The Dutch version of split pea soup: Snert! Use the slow cooker for convenience; however, you'll need to stick around to stir and add water as needed.

- Place dried split peas, ham hock, and bacon into slow cooker; pour in chicken broth and 3 1/2 cups water.
- Cover cooker and cook on High until peas are tender and broken apart, 3 to 4 hours. Stir in more water as needed to prevent soup from burning on the bottom. Stir occasionally throughout cooking.
- Stir potatoes, carrots, leek, onion, celery, and garlic into soup; mix in more water, if needed. Cover and cook soup on High for 2 more hours.
- Season with salt, black pepper, thyme, nutmeg, and cloves; mix sausage slices into soup. Cover and cook 2 more hours to blend the flavors.

This recipe is soooo tasty. I remember as a kid, my parents would take us to Andersons Restaurant. We lived in So. Cal. and I remember it being a road trip to get there. It had a big Windmill and if I remember right, something about a Dutch Girl. That's about it for the memory of the restaurant...but this recipe I remember oh so well. I hope you enjoy :)

Steps:
- Add above ingredients in large pot.
- Boil hard for 20 minutes then simmer until peas are tender, about another 25-20 minute.
- Take ham hocks out and set aside to cool.
- Strain soup through fine sieve.
- Take meat off ham hocks and add back to soup. Reheat and enjoy.
- Makes 8 bowls of yummy soup.
DUTCH SNERT (SPLIT PEA SOUP)
The Dutch, who originally settled Manhattan Island in the seventeenth century, brought with them the recipe for this rib sticking pea porridge. Today, it still is served at the Netherland club in Manhattan. Other split pea soups pale in comparison.

- In a non-reactive, large heavy stainless steel stockpot over medium heat, combine the split peas, 3 quarts cold water, the pig's knuckle or 2 pig's feet, bacon, leek greens, onion, and the chunked carrot. Cut half of the celeriac into large chunks and add along with the bouquet garni. Bring to a boil over medium high heat. Reduce the heat, partially cover, and simmer, stirring occasionally, until the peas are very soft, about 2 hours.
- Remove the pig's knuckle; set aside to cool. Remove and discard the bouquet garni. Puree the remaining contents of the pot in batches in a food mill or processor until smooth. Return to the pot.
- Cut the meat from the pig's knuckle and add to the pot along with the white part of the leek, the chopped carrot, and the celery. Finely chop the remaining celeriac and add it to the pot. Simmer, stirring occasionally, until all of the vegetables are soft, about 30 minutes.
- Stir in the kielbasa and cook until heated through, about 5 minutes. Season with salt and pepper to taste. Serve hot in soup bowls, with the chopped parsley on top. Serves 6 to 8.
