ANGEL HAIR PASTA WITH CHICKEN AND AVOCADO PESTO
Steps:
- Heat a large skillet over medium heat. Add enough olive oil to coat the skillet. Season the chicken breasts generously with salt and pepper. Cook until golden brown on one side, 8 to10 minutes; flip and cook until cooked through and no longer pink, about 5 minutes more. Transfer to a cutting board and slice into strips.
- Bring a large pot of water to a boil. Cook the pasta according to the package directions.
- Meanwhile, in a food processor, blend together the basil, walnuts, avocados, lemon juice, garlic and olive oil. Add salt and pepper to taste.
- Drain the pasta into a colander. Transfer it to a large serving platter or bowl and toss with the pesto. Top with the sliced chicken. Serve immediately.

- Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
- Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.
MEATBALLS WITH ANGEL HAIR PASTA
Steps:
- Preheat oven to 350 degrees F.
- To make meatballs: Saute shallot and garlic in olive oil and let cool. Combine all ingredients together and mix well. Scoop into 1-ounce meatballs and shape by hand. Place on a sheet pan and bake for 6 to 7 minutes. Remove from the oven and let cool. After meatballs have cooled, trim off the top and bottom so that the meatballs lay flat and the pasta piles can rest on top.
- To make the Angel Hair Piles: Melt the butter in a heavy bottomed saucepan. Add the flour stirring continuously. Cook for 2 to 3 minutes on low heat. Add heavy cream while constantly whisking. Turn off heat once the cream starts to boil and thicken. Whisk in cheese. Gently mix the cream sauce and the truffle oil with the pasta and season with salt and pepper. Using a cocktail fork or fondue fork gather about 10 to 12 strands of pasta and roll into a pile small enough to fit on top of each meatball.
- Preheat oven to 400 degrees F.
- To assemble: Place each pile of pasta on a meatball. When completed, cover and heat in the oven for 2 to 3 minutes. Place on a serving tray and garnish with small oregano leaves.

Cook together until hot and the spices have blended together with the chicken, about 5 to 10 minutes. Follow cooking directions on Angel Hair Pasta.
- 2. Once pasta is ready, drained and back in the pan, add the Tomatoes, Chopped Spinach, Chicken mix then pour the sauce over all and toss together over low heat approx 2 to 3 minutes.

- Cook the pasta in a large pot of boiling salted water until al dente. Drain, oil lightly and set aside.
- Meanwhile, combine all ingredients except the flour in a bowl. Season with salt and pepper.
- Dust a cookie sheet with flour.
- With your hands lightly oiled, shape the mixture into meatballs, about 15 ml (1 tablespoon) each. Arrange them on the sheet and dust with flour.
- In the same pot used for cooking the pasta, brown the meatballs in the oil. Add the broth and the cream. Bring to a boil, reduce the heat and simmer gently until the meatballs are cooked through. Return the pasta to the pot and add the cheese. Stir to combine and heat through. Adjust the seasoning. Add broth if necessary.
- Sprinkle each serving with basil.
