ORANGE FRENCH LACE COOKIES
Steps:
- Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper.
- Place the almonds on a sheet pan and toast them for 5 to 10 minutes, until lightly browned, tossing once to toast evenly. Place 1 cup of the toasted almonds in a food processor fitted with the steel blade and chop them very coarsely. (Reserve the rest for later.) Combine the chopped almonds with the flour and set aside.
- Meanwhile, place the butter, brown sugar, corn syrup, orange juice concentrate, orange zest, and vanilla in a small saucepan and bring to a boil over medium heat. Off the heat, gradually whisk in the flour mixture until thoroughly combined. Stir in the reserved toasted almonds.
- With 2 teaspoons (tableware rather than measuring spoons), drop rounded spoonfuls of batter (about 1 1/2 inches wide) onto the prepared sheet pans, spacing them at least 2 inches apart. (I put 8 on each pan.) Bake for 7 to 9 minutes, until the edges are golden brown, turning the pans in the oven to brown evenly. Allow to cool and transfer to a wire rack. Repeat for the remaining batter. Store the cooled cookies in an airtight container between layers of wax or parchment paper.
ANGEL FOOD COOKIES
This recipe uses 12 egg yellows so you should have an angel food cake recipe on hand so that you can use up the extra 12 whites. My husband gets really excited when he sees that I am making these cookies, I can't say I blame him. These cookies are yummy.

- Cream Sugars with shortening, add egg yolks and stir. Mix in baking powder, extract, salt, baking soda, and flour. Roll in a tablespoon size balls, Roll each ball in sugar, place on cookie sheet and push down with a drinking glass which is dipped in sugar. Bake at 350' for 7-12 minutes. Enjoy.

ANGEL FLAKE COOKIES
Another recipe that I collected when I was in high school. I usually make these at Christmas time because they are very easy and different from many cookies. I don't think anyone has ever guessed that they contain dates.

Steps:
- In a medium saucepan, boil butter, sugar, and chopped dates over medium heat for 3 minutes; stirring constantly to bring the 3 ingredients into one thick brown mixture.
- Remove from heat.
- Fold in rice krispies, nuts, and vanilla; blend well.
- Cool slightly.
- Roll mixture into 1-inch balls; roll in coconut to coat evenly.
- Cool completely before storing in container with lid.

COOKIES AND CREAM ANGEL FOOD CAKE
With chunks of cookies baked right into the cake and a gorgeous, fruity mango-strawberry topper, this angel food cake is a bit of an attention-getter.

- Heat oven to 350°F.
- Prepare cake batter as directed on package; pour into 10-inch tube pan. Top with chopped cookies; swirl gently with knife.
- Bake 35 to 40 min or until toothpick inserted near center comes out clean. Invert pan; cool cake completely. Meanwhile, blend strawberries and sugar in blender until smooth. Refrigerate until ready to serve.
- Loosen cake from sides of pan with knife. Gently remove cake from pan; place on plate. Top with 1 cup mangos. Serve topped with strawberry sauce and remaining mangos.

- Blend the shortening, sugar, eggs and vanilla until light and fluffy. Combine the flour, baking powder, baking soda, and cream of tartar. Add the flour mixture alternately with the milk to the shortening mixture. Fold in the chocolate chips. Drop by teaspoonfuls onto lightly greased cookie sheets.
- Bake in preheated oven for 10 minutes or until barely light brown at the edges.
